Recipe Ingredients
- 1 1/2 cups Shredded Gruyere Cheese
- 1/2 cup Shredded Parmesan Cheese
- 1/3 cup Walnut Halves, roughly chopped
- 1/2 tsp Dried Thyme
- 1/4 tsp Black Pepper
- 1/4 tsp Garlic Powder
How To Make
Step 1
Preheat the oven to 375°F. Line a large baking sheet with parchment paper.
Step 2
In a bowl, toss together the shredded gruyere, parmesan, dried thyme, black pepper, and garlic powder until the cheese is evenly seasoned.
Step 3
Place heaping tablespoon-sized mounds of the cheese mixture on the prepared baking sheet, leaving about 2 inches between each mound. Flatten them slightly and press a few pieces of chopped walnut into the top of each one.
Step 4
Bake for 6 to 8 minutes, until the cheese is bubbling vigorously and the edges are a deep, rich golden brown.
Step 5
Remove from the oven and let the bites cool on the baking sheet for at least 5 minutes. They will go from soft and flexible to crispy and crunchy as they cool. The walnut adds a beautiful toasty crunch. Serve at room temperature.

Tips
Shred the Gruyere Yourself
Pre-shredded cheese from a bag is coated in anti-caking starch, and that starch messes with how the cheese melts and crisps up. You’ll get bites that don’t spread evenly and don’t crisp as well.
Buy a block of gruyere and shred it on the large holes of a box grater. It melts smoother and forms that perfect lacy, crispy edge you want from these bites.
Don’t Skip Flattening the Mounds
After you place each tablespoon of cheese on the baking sheet, press it down so it’s a thin, even layer. If the mound is too tall or bunched up, the center will stay soft and chewy while the edges burn.

You want each one to be roughly the same thickness so the whole bite crisps up evenly. Think of it like a small flat disc, not a little pile.
Press the Walnuts In Firmly
Don’t just drop the walnut pieces on top. Push them gently into the cheese so they’re nestled in there. As the cheese melts, it will grab onto the walnuts and lock them in place.
If they’re just sitting loosely on top, they’ll fall right off once the bites cool down and you pick them up. A gentle press is all it takes.

Can I use a different cheese instead of Gruyere?
Gruyere works really well here because it melts evenly and crisps up beautifully, but you can swap it for other cheeses that behave similarly. Aged cheddar, Swiss, or Gouda all make great alternatives and will still give you that crispy, lacy texture.
