How To Make
Step 1
Cook the chorizo in a skillet over medium heat, breaking it into small crumbles with a spatula, for about 6 to 8 minutes until fully cooked through and slightly crispy. Transfer to a paper towel-lined plate to drain the excess grease and let it cool slightly.
Step 2
Preheat your oven to 350F. Grease a 12-cup muffin tin generously with cooking spray.
Step 3
In a blender, combine the eggs, cream cheese, cumin, smoked paprika, and salt. Blend until completely smooth.
Step 4
Pour the egg mixture into a large bowl. Fold in the cooked chorizo, 3/4 cup of the shredded pepper jack, the chopped pickled jalapenos, and the cilantro until evenly distributed.

Tips
Break the Chorizo Into Tiny Pieces
You want the chorizo crumbled into really small pieces, almost like ground meat texture. If the chunks are too big, they’ll sink to the bottom of the muffin cups and you won’t get an even bite.
Use the edge of your spatula to keep breaking it apart while it cooks. The smaller the crumbles, the better they distribute through the egg mixture so every bite has chorizo in it.
Blend the Egg Mixture Until It’s Fully Smooth
Don’t just whisk the eggs and cream cheese together by hand. The cream cheese will leave lumps throughout the egg bites if you skip the blender step. You need it completely smooth with zero chunks.

Blend for about 20 to 30 seconds until it looks like one uniform mixture. If your cream cheese isn’t fully softened, blend a little longer. Any lumps of cream cheese will show up as weird white pockets in the finished egg bites.
Drain the Chorizo Well
Chorizo releases a lot of grease while it cooks. If you don’t drain it properly, all that extra fat ends up in your egg mixture and the egg bites will be greasy and won’t set right.
After transferring it to the paper towel-lined plate, give it a minute and then blot the top with another paper towel. This removes even more grease without drying the chorizo out.
