These keto caprese stuffed meatballs are one of my favorite ways to enjoy a classic Italian flavor combo while keeping things low carb.
Each meatball has a cube of fresh mozzarella hidden inside. When you bite into one, you get that warm, melty cheese center that makes the whole thing feel special.

On top, there’s a quick marinated tomato mixture with fresh basil and a drizzle of pesto. It adds so much freshness and brings everything together.
The recipe is simple, keto friendly, and uses ingredients you can find at any grocery store. No weird substitutes or complicated steps.
If you’re looking for a low carb dinner that actually feels like a treat, this one is definitely worth trying.

Recipe Ingredients
For the Meatballs
- 1 1/2 lb Ground Beef
- 1/3 cup Almond Flour
- 1 Large Egg
- 1/4 cup Grated Parmesan Cheese
- 2 cloves Garlic, minced
- 1 tsp Dried Basil
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 4 oz Fresh Mozzarella, cut into 14 small cubes
For the Topping
- 1 cup Cherry Tomatoes, quartered
- 2 tbsp Extra Virgin Olive Oil
- 1 tbsp Balsamic Vinegar
- 1/4 cup Fresh Basil Leaves, thinly sliced
- Pinch of Salt
- 3 tbsp Basil Pesto
How To Make
Step 1
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2
In a small bowl, toss the quartered cherry tomatoes with olive oil, balsamic vinegar, sliced basil, and a pinch of salt. Set aside to marinate at room temperature while you prepare the meatballs.
Step 3
In a large bowl, combine the ground beef, almond flour, egg, parmesan, garlic, dried basil, salt, and pepper. Mix gently until just combined.
Step 4
Divide the mixture into 14 portions. Flatten each portion in your palm, place a fresh mozzarella cube in the center, and carefully seal the meat around it. Roll into a smooth ball and place on the prepared baking sheet.
Step 5
Bake for 20 to 22 minutes until the meatballs are golden brown on the outside and cooked through. You may see a little melted mozzarella bubbling at the seams, which is perfectly fine.
Step 6
Transfer the meatballs to a serving platter. Spoon the marinated tomato mixture over the top, then drizzle with basil pesto. Serve immediately while the mozzarella center is still warm and melty.

Tips
Freeze the Mozzarella Cubes First
Cut the fresh mozzarella into cubes and put them in the freezer for about 15-20 minutes before you start stuffing. Fresh mozzarella is soft and melts fast, so if it’s at room temperature when it goes in, it’ll completely liquify and leak out during baking.
Frozen cubes hold their shape longer in the oven, which means more of that gooey melted cheese stays trapped inside the meatball instead of pooling on your baking sheet.
Make Sure There Are No Gaps When You Seal
When you wrap the meat around the mozzarella cube, take a few extra seconds to pinch any seams or cracks completely shut. Then roll the ball between your palms until the surface is smooth all the way around.

Even a tiny gap in the meat will open up in the oven as the cheese melts and expands. A good seal is the difference between a mozzarella-stuffed meatball and a meatball sitting in a puddle of melted cheese.
If the meat keeps sticking to your hands and making it hard to seal, lightly wet your palms with cold water. It makes shaping way easier.
Don’t Overmix the Meat
When you’re combining the ground beef with the almond flour, egg, parmesan, and seasonings, mix only until everything is evenly distributed. Use your hands and gently fold it together rather than squeezing or kneading it.
Overworking ground beef compresses the proteins and pushes out the fat, which gives you dense, rubbery meatballs instead of tender ones. You want to see it just come together and then stop.

Frequently Asked Questions
How do I keep the mozzarella from leaking out while baking?
The key is to make sure the meat is sealed tightly around each mozzarella cube with no gaps or thin spots. After placing the cube in the center of the flattened meat, pinch the edges together firmly, then roll the ball between your palms until the surface is smooth all the way around.
If your hands are a little damp, the meat will stick to them less and be easier to work with. A small bit of cheese bubbling out is totally normal and nothing to worry about – it actually looks great.
