These keto french onion meatballs are one of my favorite dinners to make when I want something comforting but still want to keep things low carb.

Think of everything you love about french onion soup – caramelized onions, rich broth, melty cheese – but in meatball form. It’s just as satisfying and so much more filling.

Recipe Ingredients

For the Meatballs

  • 1 1/2 lb Ground Beef (80/20)
  • 1/3 cup Almond Flour
  • 1 Large Egg
  • 1 tsp Worcestershire Sauce
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

For the Onion Gravy

  • 2 tbsp Butter
  • 2 Medium Yellow Onions, thinly sliced
  • 1 tsp Fresh Thyme Leaves
  • 1 1/2 cups Beef Broth
  • 1 tbsp Worcestershire Sauce
  • Salt and Pepper, to taste

For the Topping

  • 1 1/2 cups Shredded Gruyere Cheese
  • Fresh Thyme, for garnish

How To Make

Step 1

In a large bowl, combine the ground beef, almond flour, egg, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently until just combined, then shape into 16 meatballs. Set aside.

Step 2

Melt the butter in a large oven-safe skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 15 to 18 minutes until they are deeply caramelized and golden brown. Sprinkle in the thyme leaves and stir.

Step 3

Push the onions to the edges of the skillet and increase the heat to medium-high. Sear the meatballs in the center for about 2 minutes per side until nicely browned on the outside. They do not need to be cooked through at this point.

Step 4

Pour the beef broth and Worcestershire sauce into the skillet around the meatballs. Stir gently to combine with the onions. Bring to a simmer, then reduce heat to medium-low. Cover and let the meatballs simmer for 12 to 15 minutes until cooked through.

Step 5

Preheat your broiler to high. Sprinkle the shredded gruyere cheese generously over the top of the meatballs and onions in the skillet.

Step 6

Place the skillet under the broiler for 2 to 3 minutes, watching closely, until the cheese is melted, bubbly, and lightly golden. Garnish with fresh thyme and serve straight from the skillet.

Don’t Overwork the Meatball Mixture

When you’re mixing the ground beef with the almond flour, egg, and seasonings, use your hands and mix it just enough so everything is evenly distributed. Stop as soon as you don’t see any dry spots of almond flour.

If you keep kneading and squeezing the meat, the meatballs will come out dense and tough instead of tender. Think of it like you’re gently folding things together, not making a dough.

Also, wetting your hands slightly before rolling the meatballs makes them way easier to shape and keeps the meat from sticking to your palms.

Take Your Time Caramelizing the Onions

The 15 to 18 minutes in the recipe is a minimum. Don’t rush this step by turning the heat up higher to speed things along. Medium heat is the sweet spot.

You want the onions to turn a deep golden brown, not just soft and translucent. That deep color is where all the rich, sweet, French onion soup flavor comes from. If they’re still pale, keep going.

If the onions start sticking to the pan, add a tiny splash of beef broth to loosen them up. That stuck-on stuff is pure flavor, and the liquid will help lift it right off the pan.

Get a Good Sear on the Meatballs

When you push the onions aside and sear the meatballs, make sure the pan is actually hot before you place them in. You should hear a strong sizzle the moment a meatball touches the surface.
