Have you ever wanted a sweet dessert that also gives you a small taste of your favorite morning coffee? If you like creamy treats with a hint of espresso, you are going to love this recipe.
Today I am sharing my keto caramel macchiato cheesecake bars, and they are easily one of my favorite baked treats so far.

When you follow a low carb or keto friendly lifestyle, finding desserts that feel truly rich can sometimes be a challenge. These bars solve that problem because they taste just like a fancy drink from a cafe.
The bottom layer has a lovely coffee taste, the top layer is smooth and light, and the homemade caramel ties everything together.
You can slice them into neat squares, which makes them great for meal prep whenever you need a quick sweet bite during the week.
Why You’ll Love This Recipe
Coffeehouse Taste – You get the rich flavor of a coffee shop drink without leaving your house or breaking your diet.

Two Stunning Layers – The contrasting espresso and sweet vanilla cream layers look beautiful and mimic a real macchiato.
Gooey Salted Caramel – Real butter and cream make a sticky, rich caramel that stays perfectly soft even after chilling.
Recipe Ingredients
For the Espresso Crust
- 1 1/2 cups Almond Flour
- 1/4 cup Powdered Erythritol Sweetener
- 1 tsp Instant Espresso Powder
- 1/4 tsp Salt
- 5 tbsp Butter, Melted
For the Cheesecake Filling
- 16 oz Cream Cheese, Softened
- 1/2 cup Powdered Erythritol Sweetener
- 1/4 cup Sour Cream
- 1 1/2 tsp Vanilla Extract
- 2 Large Eggs
- 1 tbsp Instant Espresso Powder
- 1 tbsp Hot Water
For the Salted Caramel
- 3 tbsp Butter
- 1/3 cup Allulose Brown Sugar Substitute
- 1/4 cup Heavy Cream
- 1/2 tsp Vanilla Extract
- 1/4 tsp Sea Salt
How To Make
Step 1
Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper, leaving an overhang. Mix the almond flour, powdered sweetener, espresso powder, salt and melted butter, press firmly into the pan and bake for 10 minutes. Reduce the oven to 325°F.
Step 2
Beat the cream cheese and powdered sweetener until smooth. Mix in the sour cream and vanilla, then add the eggs one at a time on low speed just until combined.
Step 3
Dissolve the espresso powder in the hot water. Pour half of the cheesecake filling into a second bowl and stir the espresso into it until evenly coffee colored.
Step 4
Spread the espresso filling over the crust, then gently spoon the vanilla filling on top and smooth it out to create two distinct layers like a macchiato.
Step 5
Bake for 28 to 32 minutes, until the edges are set and the center jiggles slightly. Cool for 1 hour, then chill for at least 4 hours.
Step 6
Melt the butter in a small saucepan over medium heat and whisk in the brown sugar substitute and heavy cream. Simmer for 5 to 6 minutes, stirring often, until the caramel coats the back of a spoon.
Step 7
Stir the vanilla and sea salt into the caramel and let it cool for 15 minutes so it thickens.
Step 8
Drizzle the caramel over the chilled cheesecake in a crosshatch pattern, lift out using the parchment and slice into 16 bars.

Tips
Bring the Dairy to Room Temperature
Make sure your cream cheese, sour cream, and eggs sit on the counter for at least an hour before you begin baking.
Cold ingredients will leave you with tiny, stubborn lumps that force you to overmix the batter to get it smooth.
Softened ingredients blend together effortlessly into a silky texture with very little effort.
Keep the Mixer on Low for the Eggs
Once it is time to add the eggs, turn your hand mixer down to its lowest possible speed.

Beating eggs too fast whips excess air into the batter, which causes the cheesecake to puff up in the oven and sink in the middle as it cools.
Mix just until the yellow yolk disappears into the batter, and then stop right away.
Spoon the Vanilla Layer Gently
To get that distinct macchiato look with two clean layers, spread your coffee batter evenly across the crust first.
I recommend spooning small dollops of the vanilla batter lightly across the top, rather than pouring it all in one spot.
Once the dollops are down, use the back of a spoon to gently smooth them together so the layers do not blend into each other.

Frequently Asked Questions
Why do I need to use allulose for the caramel?
Allulose is essential here because it melts and caramelizes just like real sugar without crystallizing once it cools down.
If you use an erythritol based sweetener instead, your caramel sauce will turn grainy and crunchy once it chills in the fridge.
