Tips

Blend the Cottage Cheese Until Silky Smooth

From my experience, you cannot rush blending the cottage cheese. Any tiny curds left behind will melt into wet spots and leave visible white specks in your red dough.

I recommend running your blender and stopping once or twice to scrape the sides down. You want the mixture to look completely silky, just like sour cream, before adding it to the bowl.

Stick With Gel Food Coloring

I always use red gel food coloring here instead of the liquid drops from standard grocery store bottles. Liquid coloring adds extra water that can make this low carb dough sticky and hard to handle.

Gel color is also much more concentrated, so you need less of it to overcome the brown cocoa powder. This gives you that vibrant red velvet shade without thinning out your dough.

Do Not Skip Chilling the Dough

The dough will feel quite soft and loose right after you mix the wet and dry ingredients together. Giving it 30 minutes in the fridge lets the almond flour absorb the liquids properly.

Chilling also firms up the butter so the cookies do not spread into flat puddles in the oven. You will have a much easier time scooping and shaping neat rounds once it is cold.

Frequently Asked Questions

Will these cookies taste like cottage cheese?

Not at all! Blending the cottage cheese removes the curds, while the cocoa, sweetener, and vanilla completely mask any cheesy flavor.

The cottage cheese simply gives the cookies a rich, cake-like texture while boosting the protein in your low carb treat.
