- 3/4 cup Almond Flour
- 2 tbsp Butter, melted
- 1 tbsp Powdered Erythritol

- 1 cup Heavy Whipping Cream
- 1 tsp Vanilla Extract
- Zest of 1 Lemon

- 2 tbsp Powdered Erythritol
- 1 tbsp Lemon Juice
- 1 tbsp Water

How To Make
Step 1
Preheat the oven to 325F. Mix the almond flour, melted butter, powdered erythritol, and salt. Spread on a parchment-lined baking sheet and bake for 10 to 12 minutes, stirring halfway, until golden and crunchy. Let cool completely.
Step 2
Make the berry sauce by combining the mixed berries, powdered erythritol, lemon juice, and water in a small saucepan over medium heat. Cook for 6 to 8 minutes, stirring occasionally and gently mashing the berries, until the sauce thickens.
Remove from heat and let cool completely. The sauce will thicken further as it cools.
Step 3
Beat the cream cheese, powdered erythritol, vanilla, and lemon zest together until completely smooth and fluffy, about 3 minutes.
In a separate bowl, whip the heavy cream to stiff peaks. Fold the whipped cream into the cream cheese mixture in three additions until light and mousse-like.
Step 4
Begin layering in 6 small jars or glasses. Start with a spoonful of the almond crumble, then a layer of the cheesecake mousse, then a drizzle of berry sauce. Repeat the layers once more.
Step 5
Top each jar with a final spoonful of crumble, a few fresh berries, and a mint leaf if desired. Refrigerate for at least 1 hour before serving to let the flavors meld together.

Tips
Cool the Crumble and Sauce Completely
This is the most important step for clean, defined layers. If your crumble or berry sauce is even slightly warm when you start assembling, the cheesecake mousse will melt and everything will blend together into a messy swirl.
Spread the crumble on a plate after baking so it cools faster. For the berry sauce, pop it in the fridge for about 20 minutes after cooking. Both should be completely room temperature or colder before they go into the jars.
Get the Cream Cheese Really Smooth Before Adding the Cream
Beat the cream cheese mixture on its own for a full 3 minutes before you even think about folding in the whipped cream. If there are any lumps at this stage, they’ll stay in your final mousse and you’ll get little chunks of plain cream cheese in every bite.

Make sure the cream cheese is truly softened before you start. Leave it out on the counter for at least an hour. If it’s still cold in the center, it won’t blend smooth no matter how long you beat it.
Fold the Whipped Cream in Three Batches
Don’t dump all the whipped cream into the cream cheese at once. The first batch is meant to lighten the cream cheese mixture so the rest folds in easier. Stir that first batch in pretty firmly – it’s okay to deflate it a bit.
For the second and third batches, switch to gentle folding. Use a spatula and scoop from the bottom up and over. This keeps the air in the whipped cream so your mousse stays light and fluffy instead of dense.
