Ingredients
  

For the Crumble

  • 3/4 cup Almond Flour
  • 2 tbsp Butter, melted
  • 1 tbsp Powdered Erythritol
  • 1 Pinch Salt

For the Cheesecake Filling

  • 12 oz Cream Cheese, softened
  • 1/3 cup Powdered Erythritol
  • 1 cup Heavy Whipping Cream
  • 1 tsp Vanilla Extract
  • 1 Zest of 1 Lemon

For the Berry Sauce

  • 1 cup Mixed Berries (raspberries, blueberries, blackberries)
  • 2 tbsp Powdered Erythritol
  • 1 tbsp Lemon Juice
  • 1 tbsp Water

For Garnish

  • Fresh Berries
  • Fresh Mint Leaves (optional)

Instructions
 

  • Preheat the oven to 325F. Mix the almond flour, melted butter, powdered erythritol, and salt. Spread on a parchment-lined baking sheet and bake for 10 to 12 minutes, stirring halfway, until golden and crunchy. Let cool completely.
  • Make the berry sauce by combining the mixed berries, powdered erythritol, lemon juice, and water in a small saucepan over medium heat. Cook for 6 to 8 minutes, stirring occasionally and gently mashing the berries, until the sauce thickens.
    Remove from heat and let cool completely. The sauce will thicken further as it cools.
  • Beat the cream cheese, powdered erythritol, vanilla, and lemon zest together until completely smooth and fluffy, about 3 minutes.
    In a separate bowl, whip the heavy cream to stiff peaks. Fold the whipped cream into the cream cheese mixture in three additions until light and mousse-like.
  • Begin layering in 6 small jars or glasses. Start with a spoonful of the almond crumble, then a layer of the cheesecake mousse, then a drizzle of berry sauce. Repeat the layers once more.
  • Top each jar with a final spoonful of crumble, a few fresh berries, and a mint leaf if desired. Refrigerate for at least 1 hour before serving to let the flavors meld together.
