  • 1/3 cup Golden Flaxseed Meal
  • 1/4 cup Granular Erythritol
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 3 tbsp Butter, melted
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 1 tbsp Sugar-Free Maple Syrup

How To Make

Step 1

Preheat your oven to 325F.

Step 2

In a large bowl, whisk together the almond flour, flaxseed meal, erythritol, cinnamon, baking powder, and salt until well combined.

Tips

Roll the Dough Thin and Even

Getting the dough to a consistent 1/8 inch thickness is the most important step here. If some areas are thicker than others, those parts will still be soft and chewy while the thinner parts are already browning.

Use the parchment paper trick from the recipe and roll from the center outward in all directions. If the edges start cracking, just press them back together with your fingers and keep rolling.

If you have rolling guide bands or two chopsticks, place them on either side of the dough so your rolling pin rides on them. That way you get perfectly even thickness without guessing.

Can I use coconut flour instead of almond flour?

Coconut flour is not a good 1:1 swap here because it absorbs way more liquid than almond flour. If you use it, you would need roughly 1/3 of the amount and probably an extra egg to hold things together, which changes the recipe quite a bit.

If you need a nut-free option, sunflower seed flour works better as a substitute. Just keep in mind it can turn slightly green when it reacts with baking powder – totally harmless, just a little surprising.
