How To Make
Step 1
Preheat oven to 350F and line a 9×9 pan with parchment paper.

Tips
Melt the Chocolate and Butter Separately
Don’t try to melt the butter and chocolate together in one go. Melt them separately and then whisk them together. Sugar free dark chocolate can seize up or get grainy if it gets too hot, and butter heats way faster than chocolate.
For the chocolate, I recommend microwaving it in 20 second bursts, stirring between each one. It should be smooth and pourable before you combine it with the butter.
Once you whisk them together, let the mixture cool for a couple of minutes before adding the eggs. If it’s too hot, the eggs will start to cook and you’ll get little scrambled bits in your brownie batter.
Don’t Overbake the Brownies
Pull the brownies out when the edges look set but the center still has a slight wobble to it. A toothpick should come out with moist crumbs, not clean. They firm up a lot as they cool, so what looks underdone in the oven will be perfectly fudgy once cooled.

Almond flour brownies go from fudgy to dry and crumbly really fast. I’ve found that 22 minutes is the sweet spot for most ovens, but start checking at 20 minutes just to be safe.
Let them cool completely in the pan before adding the cream layer. If the brownies are even a little warm, the cream cheese layer will melt and slide around instead of setting up firm.
Actually Reduce the Strawberry Puree
This step is easy to rush, but don’t skip or shortcut it. The puree needs to cook down and thicken so it doesn’t add too much liquid to your cream cheese mixture. Too much liquid means the cream layer won’t set properly and will be runny when you try to slice.
You want the puree to reduce by about half. It should look like a thick jam consistency when it’s done. Stir it frequently so it doesn’t burn on the bottom of the pan.
Let it cool completely before folding it into the cream cheese mixture. If it’s warm, it will soften the cream cheese and thin out your heavy cream, and you’ll lose that thick, spreadable texture you need.
