Keto Strawberries & Cream Brownies

These keto strawberries and cream brownies are one of the best low carb desserts I’ve made in a while. Rich fudgy chocolate on the bottom, a creamy strawberry layer on top, and fresh berries to finish it off.

If you’ve been on keto for a while, you know how hard it is to find desserts that actually feel like a real treat. This one checks all the boxes without any of the sugar.

The brownie base is dense and chocolatey, exactly how a good brownie should be. And that strawberry cream layer adds a fruity freshness that balances everything out perfectly.

They look impressive too, so they’re great for sharing or bringing to a gathering. Nobody will believe they’re sugar free.

The whole recipe is pretty simple and doesn’t require any unusual ingredients. If you’ve baked keto brownies before, you’ll feel right at home with this one.

How To Make

Step 1

Preheat oven to 350F and line a 9×9 pan with parchment paper.

Step 2

Whisk melted butter, melted chocolate, powdered allulose, eggs, and vanilla until smooth. Fold in almond flour, cocoa powder, and salt to make a fudgy batter.

Spread into the pan and bake for 22 to 25 minutes until set with a soft center. Cool completely in the pan.

Step 4

Beat the cream cheese and powdered allulose until smooth and fluffy. Beat in heavy cream and vanilla until silky.

Spread the strawberry cream evenly over the cooled brownies and chill 1 hour until firm.

Step 7

Arrange the sliced fresh strawberries in rows over the cream layer, then drizzle the melted dark chocolate over the top in thin elegant lines.

Tips

Melt the Chocolate and Butter Separately

Don’t try to melt the butter and chocolate together in one go. Melt them separately and then whisk them together. Sugar free dark chocolate can seize up or get grainy if it gets too hot, and butter heats way faster than chocolate.

For the chocolate, I recommend microwaving it in 20 second bursts, stirring between each one. It should be smooth and pourable before you combine it with the butter.

Once you whisk them together, let the mixture cool for a couple of minutes before adding the eggs. If it’s too hot, the eggs will start to cook and you’ll get little scrambled bits in your brownie batter.

Don’t Overbake the Brownies

Pull the brownies out when the edges look set but the center still has a slight wobble to it. A toothpick should come out with moist crumbs, not clean. They firm up a lot as they cool, so what looks underdone in the oven will be perfectly fudgy once cooled.

Almond flour brownies go from fudgy to dry and crumbly really fast. I’ve found that 22 minutes is the sweet spot for most ovens, but start checking at 20 minutes just to be safe.

Let them cool completely in the pan before adding the cream layer. If the brownies are even a little warm, the cream cheese layer will melt and slide around instead of setting up firm.

Actually Reduce the Strawberry Puree

This step is easy to rush, but don’t skip or shortcut it. The puree needs to cook down and thicken so it doesn’t add too much liquid to your cream cheese mixture. Too much liquid means the cream layer won’t set properly and will be runny when you try to slice.

You want the puree to reduce by about half. It should look like a thick jam consistency when it’s done. Stir it frequently so it doesn’t burn on the bottom of the pan.

Let it cool completely before folding it into the cream cheese mixture. If it’s warm, it will soften the cream cheese and thin out your heavy cream, and you’ll lose that thick, spreadable texture you need.

Frequently Asked Questions

Can I use frozen strawberries instead of fresh?

You can use frozen strawberries for the puree without any issues – just thaw them first and drain off the extra liquid before blending. Since you are reducing the puree on the stove anyway, a little extra moisture is not a big deal, but starting with less liquid saves time.

For the topping, though, fresh strawberries work much better. Frozen ones get soft and watery as they thaw, which can make the cream layer soggy and the presentation less appealing.
