- 4 large Boneless Skinless Chicken Breasts
- 6 oz Cream Cheese, softened
- 4 oz Crumbled Feta Cheese
- 2 cups Fresh Baby Spinach, chopped
- 3 cloves Garlic, minced
- 1/4 cup Grated Parmesan Cheese
- 1 tsp Italian Seasoning
- 1/2 tsp Red Pepper Flakes
- 1.5 tsp Salt
- 1 tsp Black Pepper
- 2 tbsp Olive Oil
- 1 tbsp Paprika
How To Make
Step 1
Preheat oven to 400F. In a bowl, combine cream cheese, feta, spinach, garlic, parmesan, italian seasoning, and red pepper flakes until well mixed.
Step 2
Cut a deep pocket into the side of each chicken breast, being careful not to slice all the way through.
Step 3
Stuff each chicken breast generously with the spinach feta filling and secure the opening with toothpicks if needed.
Step 4
Pat outside of chicken dry and season all over with salt, pepper, and paprika.
Step 5
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts 3-4 minutes per side until deeply golden brown.
Step 6
Transfer the skillet to the oven and bake 15-18 minutes until chicken reaches 165F internally.
Step 7
Rest chicken 5 minutes, remove toothpicks, and slice to serve.

Tips
Pound the Chicken Before You Cut the Pocket
Before you slice into the chicken breast, place it in a zip-lock bag and gently pound it to an even thickness of about 3/4 inch. This makes it way easier to cut a clean, deep pocket without accidentally slicing through the other side.
It also means the chicken will cook evenly in the oven. Thick chicken breasts that aren’t evened out tend to dry out on the thin end while the thick part is still undercooked.
Wilt the Spinach Before Mixing the Filling
Even though the recipe uses fresh baby spinach, I recommend giving it a quick wilt in a hot pan for about 30 seconds before mixing it into the filling. Raw spinach holds a lot of water, and that moisture releases inside the chicken while it bakes.

Once it’s wilted, squeeze it out in a paper towel to remove as much liquid as possible. This keeps the filling thick and creamy instead of watery, and it also means the filling stays inside the pocket instead of leaking out during cooking.
Make Sure the Cream Cheese Is Actually Soft
The filling will only mix smoothly if the cream cheese is truly at room temperature. If it’s still cold in the center, you’ll end up with lumps and the feta and spinach won’t distribute evenly throughout.
I’ve found that leaving it on the counter for about 45 minutes does the trick. If you’re short on time, cut it into small cubes and spread them out on a plate. They’ll soften in about 15 minutes that way.

Yes, you can use frozen spinach, but make sure you thaw it completely and squeeze out as much water as possible before mixing it into the filling. If you skip this step, the extra moisture will make the filling runny and it won’t stay inside the chicken while it cooks.
About half a cup of well-drained frozen spinach is a good substitute for the 2 cups of fresh baby spinach in this recipe.
