Keto Creme Brulee Cookies

Creme brulee is one of those desserts that feels fancy and a little out of reach. So I turned that classic flavor into a cookie you can make at home without much fuss.

These keto creme brulee cookies have a soft, buttery base with a creamy custard center. And on top, there is that crackly caramelized layer you love about the original dessert.

The best part is that they are low carb and keto friendly. That means you get all the flavor without the sugar or the guilt that usually comes with it.

I use allulose instead of regular sugar, which is what gives the tops that glossy, crisp finish after a quick broil. It works really well and keeps the whole thing keto.

If you have been missing creme brulee on a low carb diet, these cookies are a nice little fix. They are simple, satisfying, and taste like the real thing.

Why You’ll Love This Recipe

Creamy Custard Center – Every cookie hides a soft custard filling that tastes just like real creme brulee.

Crackly Sugar Top – The broiled allulose forms a glossy crunchy top that shatters with each bite.

Recipe Ingredients

For The Cookies

  • 1 1/2 cups Almond Flour
  • 2 tbsp Coconut Flour
  • 1/3 cup Powdered Allulose
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 cup Butter, Softened
  • 1 Large Egg Yolk
  • 1 tsp Vanilla Bean Paste
  • 1/2 tsp Caramel Extract

For The Custard Center

  • 4 oz Cream Cheese, Softened
  • 2 tbsp Powdered Allulose
  • 1 Large Egg Yolk
  • 1/2 tsp Vanilla Bean Paste

For The Brulee Top

  • 3 tbsp Granulated Allulose

How To Make

Step 1

Preheat the oven to 325°F and line a baking sheet with parchment paper.

Step 2

Beat the cream cheese, powdered allulose, egg yolk, and vanilla bean paste until smooth. Freeze small teaspoon-size portions on a parchment-lined plate for 20 minutes.

Step 3

Stir almond flour, coconut flour, powdered allulose, baking powder, and salt in a bowl. Mix in the softened butter, egg yolk, vanilla bean paste, and caramel extract until a soft dough forms.

Step 4

Scoop 12 portions of dough and flatten each one into a thick round. Place a frozen custard portion in the center and wrap the dough around it.

Step 5

Arrange the cookies on the baking sheet and gently flatten the tops. Bake for 13 to 15 minutes, until the edges are lightly golden and the centers are set.

Step 6

Cool the cookies completely, then sprinkle each top with granulated allulose.

Step 7

Broil for 1 to 2 minutes on the top rack, watching closely, until the allulose melts and turns glossy. Let the tops firm up for 5 minutes before serving.

Tips

Freeze the Custard Until Solid

Before you do anything else, get that custard filling into the freezer and give it the full 20 minutes. From my experience, if the centers are still soft when you wrap them in dough, they spread out and leak while baking.

If your kitchen is warm, I recommend leaving them in a little longer, closer to 30 minutes. You want each portion firm enough to pick up without it losing its shape.

Seal the Dough Fully Around the Filling

When you wrap the dough around each frozen custard piece, make sure you pinch it closed all the way with no gaps. Any thin spot or opening will let the creamy center escape as the cookies bake.

My favorite trick here is to cup the dough in my palm first, set the custard in the middle, then bring the edges up and smooth them together. Roll it gently into a ball so the seam disappears.

Use Room Temperature Butter and Cream Cheese

Both the butter for the dough and the cream cheese for the filling need to be properly softened before you start. Cold butter won’t blend into the almond flour evenly, and cold cream cheese leaves lumps in the custard.

I’ve found that setting them out for about an hour ahead makes everything come together smooth. Press a finger into the butter and it should leave a dent without feeling greasy.

Frequently Asked Questions

Can I use a kitchen torch instead of the broiler for the brulee top?

Yes, a kitchen torch works really well here and gives you more control than the broiler does.

Just hold the flame a few inches above the granulated allulose and move it around slowly until the top turns glossy and golden.
