Keto Yeast Bread

Missing regular bread is one of the hardest parts when you start eating keto.

Most low carb breads rely heavily on almond flour, which often makes them feel heavy or taste too much like eggs.

Freshly baked keto yeast loaf

That is why I love this keto yeast bread, because it actually rises and smells like traditional bread while it bakes.

You get a soft slice that holds together firmly, making it wonderful for cold sandwiches or warm morning toast.

It is completely low carb and keto friendly, so you can enjoy real bread again without worrying about extra carbs.

Why You’ll Love This Recipe

Authentic Bread Texture – Vital wheat gluten gives this loaf the real, chewy texture of traditional bakery bread.

Recipe Ingredients

  • 1 cup Warm Water (105-110°F)
  • 1 tbsp Active Dry Yeast
  • 1 tsp Honey (Feeds The Yeast)
  • 2 large Eggs, Room Temperature
  • 2 tbsp Butter, Softened
  • 1 1/4 cups Vital Wheat Gluten
  • 2/3 cup Golden Flaxseed Meal
  • 1/2 cup Oat Fiber
  • 2 tbsp Granulated Erythritol
  • 1 tsp Salt
  • 1/2 tsp Xanthan Gum
  • 1 tbsp Butter, Melted, For Brushing

How To Make

Step 1

Stir the warm water, honey and yeast together in a small bowl. Let it sit for 7-10 minutes until foamy on top. The yeast consumes the honey, so it does not add carbs to the finished bread.

Step 2

In the bowl of a stand mixer, whisk together the vital wheat gluten, flaxseed meal, oat fiber, erythritol, salt and xanthan gum.

Step 3

Lightly beat the eggs, then add them to the dry ingredients along with the softened butter and the foamy yeast mixture.

Step 4

Knead with the dough hook on medium speed for 7-8 minutes, until the dough is smooth, stretchy and pulls away from the sides of the bowl.

Step 5

Shape the dough into a log and place it in a greased 8.5×4.5-inch loaf pan. Cover with a clean towel and let it rise in a warm spot for 60-75 minutes, until nearly doubled in size.

Step 6

Preheat the oven to 350°F. Bake the loaf for 30-35 minutes, until deep golden brown and it sounds hollow when tapped on top.

Step 7

Brush the hot loaf with melted butter. Cool in the pan for 10 minutes, then transfer to a wire rack and cool completely before slicing.

Tips

Stick to Golden Flaxseed Meal

I recommend using golden flaxseed meal rather than brown flaxseed meal for this loaf.

Brown flax has a very strong, earthy taste that can easily overpower the bread. Golden flax gives you a mild flavor and keeps the bread looking like traditional whole wheat.

Check the Water Temperature

You’ll get the best results if you test the water temperature with a kitchen thermometer before stirring in the yeast.

Water that is too hot will deactivate the yeast, while water that is too cold will not wake it up properly.

Aiming right between 105 and 110 degrees gives you a reliable, foamy rise every single time.

Do Not Shorten the Kneading Time

From my experience, you really need the full seven to eight minutes of kneading with the stand mixer hook.

Vital wheat gluten requires plenty of time and movement to develop its stretchy web. That structure is what traps the yeast bubbles and keeps your low carb bread light instead of dense.

Frequently Asked Questions

Can I substitute oat flour for the oat fiber?

No, oat flour and oat fiber are two completely different ingredients. Oat flour is ground from whole oats and is high in starch, which will raise the carb count drastically.

Oat fiber is made entirely of insoluble plant fiber with zero net carbs, which is essential for giving this loaf the right bulk and texture.
