Bread is usually the first thing people miss when they start eating low carb. That warm, soft roll on the side of your plate is hard to give up.
Well, these keto dinner rolls are here to fix that. They are soft, fluffy, and taste just like the real thing.

They are made with almond flour and a bit of cheese, so they stay low carb and keto friendly without any regular flour.
I like to serve them warm with a little butter on top. They go great next to soups, salads, or any main dish.
Give them a try and see how easy it is to bring bread back to your table.

Recipe Ingredients
- 1 1/2 cups Shredded Mozzarella
- 2 oz Cream Cheese
- 1 1/4 cups Almond Flour
- 2 tbsp Coconut Flour
- 1 tbsp Baking Powder
- 1/2 tsp Salt
- 1 large Egg
- 1 large Egg Yolk
- 2 tbsp Butter, Melted
- 1/2 tsp Garlic Powder
How To Make
Step 1
Preheat the oven to 375 F and line a baking sheet with parchment paper. In a microwave-safe bowl melt the mozzarella and cream cheese together in 30 second bursts, stirring until smooth and stretchy.
Step 2
In a separate bowl whisk the almond flour, coconut flour, baking powder, salt, and garlic powder. Add the melted cheese mixture, whole egg, and egg yolk. Knead until a soft, uniform dough forms.
Step 3
Divide the dough into 8 equal pieces and roll each into a smooth ball. Place them on the baking sheet with a little space between each roll.
Step 4
Brush the tops with melted butter. Bake for 18 to 22 minutes until puffed and golden brown.
Step 5
Brush once more with remaining melted butter right out of the oven. Cool for 5 to 10 minutes so the centers set soft and fluffy.

Tips
Use Low Moisture Mozzarella
I recommend using pre-shredded low moisture mozzarella rather than fresh mozzarella. Fresh mozzarella contains too much water and can make the dough loose and difficult to shape.
If you shred the cheese yourself, choose a firm block of low moisture mozzarella. Measure it after shredding so the dough has the right amount of cheese.
Melt the Cheese Until Smooth
Heat the mozzarella and cream cheese in 30-second bursts, stirring well after each one. The mixture is ready when it looks smooth and stretches easily without separate pieces of cream cheese.

Avoid heating it longer than needed because the cheese can become oily and firm. If it starts to cool before mixing, warm it for another 10 seconds so it blends easily with the flour and eggs.
Measure the Flours Carefully
Almond flour and coconut flour absorb moisture differently, so accurate amounts are important. Spoon each flour into the measuring cup and level the top instead of packing it down.
Use fine, blanched almond flour for the softest rolls. Almond meal has a coarser texture and can make the rolls heavier and less fluffy.

Frequently Asked Questions
Can I use pre-shredded mozzarella for these keto dinner rolls?
Freshly shredded low moisture mozzarella gives the smoothest dough and the best soft texture. Pre-shredded mozzarella can work, but the added coating may make the dough a little less stretchy.
If you use pre-shredded cheese, melt it slowly and stir well between each microwave session. Let the cheese mixture become fully smooth before adding the dry ingredients.
