When you follow a keto diet, traditional birthday desserts are usually one of the first things you miss.
That is why I created these keto birthday cake cheesecake bars, so you can enjoy that fun bakery flavor without the sugar.

They have a buttery cookie crust on the bottom, a creamy cake batter cheesecake layer in the middle, and a light frosting on top.
Because this dessert is low carb and keto friendly, it lets you celebrate special days while staying on track with your goals.
They are very easy to slice into bars and serve, which makes them great for parties or simple weekend treats.

How To Make
Step 1
Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper, leaving an overhang. Mix the almond flour, powdered sweetener, salt, melted butter and vanilla until crumbly, then stir in 1 tbsp sprinkles. Press firmly into the pan and bake for 10 minutes, then reduce the oven to 325°F.
Step 2
Beat the cream cheese and powdered sweetener until smooth. Mix in the sour cream, vanilla and almond extract, which together give that classic cake batter flavor.
Step 3
Add the eggs one at a time on low speed just until combined. Gently fold in 3 tbsp sprinkles with just a few strokes so the colors do not bleed.
Step 4
Pour the filling over the crust and bake for 28 to 32 minutes, until the edges are set and the center jiggles slightly. Cool for 1 hour, then chill for at least 4 hours.
Step 5
Beat the cream cheese, powdered sweetener and vanilla for the frosting until smooth. Pour in the heavy cream and whip until thick and fluffy with stiff peaks.
Step 6
Spread the frosting over the chilled cheesecake and top with the remaining sprinkles.
Step 7
Lift out using the parchment and slice into 16 bars.

Tips
Bring the Dairy and Eggs to Room Temperature
I recommend pulling your cream cheese, sour cream, and eggs out of the fridge at least an hour before you begin.
If the cream cheese is even slightly cold, it will leave tiny white lumps in your batter that are impossible to beat out.
Cold eggs can also cause the smooth batter to separate, which ruins the velvety texture of the baked bars.
Fold the Sprinkles in at the Very End
Sugar free rainbow sprinkles tend to dissolve and bleed color much faster than regular sugar sprinkles.

From my experience, you should fold them in with a spatula using only three or four gentle turns right before pouring the batter over the crust.
If you stir too much or use an electric mixer, the colors will run together and turn the entire cheesecake a muddy gray shade.
Stick with Powdered Sweetener Only
You will get the best results if you use a powdered sweetener rather than a granular version for every part of this recipe.
Granular erythritol does not dissolve well in fat-heavy mixtures without high heat, which leaves behind an unpleasant gritty crunch.
Powdered sweetener blends smoothly and prevents that sharp cooling sensation from overpowering your low carb dessert.

Frequently Asked Questions
How do I keep the rainbow sprinkles from bleeding into the batter?
Gently fold the sprinkles in right before pouring the batter into the pan, using only two or three quick strokes.
You can also chill the sprinkles in the freezer for ten minutes beforehand so the colors stay bright instead of melting into the cheesecake.
