8x8 inch baking pan
hand mixer
Preheat the oven to 350°F and line an 8x8 inch baking pan with parchment paper, leaving an overhang. Mix the almond flour, powdered sweetener, salt, melted butter and vanilla until crumbly, then stir in 1 tbsp sprinkles. Press firmly into the pan and bake for 10 minutes, then reduce the oven to 325°F.
Beat the cream cheese and powdered sweetener until smooth. Mix in the sour cream, vanilla and almond extract, which together give that classic cake batter flavor.
Add the eggs one at a time on low speed just until combined. Gently fold in 3 tbsp sprinkles with just a few strokes so the colors do not bleed.
Pour the filling over the crust and bake for 28 to 32 minutes, until the edges are set and the center jiggles slightly. Cool for 1 hour, then chill for at least 4 hours.
Beat the cream cheese, powdered sweetener and vanilla for the frosting until smooth. Pour in the heavy cream and whip until thick and fluffy with stiff peaks.
Spread the frosting over the chilled cheesecake and top with the remaining sprinkles.
Lift out using the parchment and slice into 16 bars.
