Bread was one of the hardest things for me to give up when I changed the way I eat. Fresh, crusty bread is something I truly missed having on the dinner table.
That is why I worked on this recipe for keto french baguettes. It gives you that classic bakery feel while keeping everything completely low carb.

The outside bakes up golden and firm, while the inside stays soft and airy just like traditional bread.
You can slice it up for sandwiches, toast it for breakfast, or simply serve it warm with a little butter.
It is easy to make at home and fits right into your routine without any extra stress.
Why You’ll Love This Recipe
Authentic Crispy Crust – You get a wonderfully golden and crackly crust that rivals traditional bakery bread.
Soft Chewy Center – The interior stays light, airy, and chewy without any gluten or wheat flour.

Zero Eggy Taste – Using only egg whites and vinegar keeps the flavor clean, fresh, and truly bread-like.
Simple to Shape – The dough feels just like soft clay, making it foolproof to roll into perfect baguettes.
Recipe Ingredients
- 1 1/4 cups Blanched Almond Flour
- 5 tbsp Psyllium Husk Powder, Finely Ground
- 2 tsp Baking Powder
- 1 tsp Salt
- 3 large Egg Whites
- 2 tsp Apple Cider Vinegar
- 1 cup Boiling Water
How To Make
Step 1
Preheat the oven to 350°F and place a rack in the lower third. Line a baking sheet with parchment paper.
Step 2
In a large bowl, whisk together the almond flour, psyllium husk powder, baking powder and salt until very well combined.
Step 3
Add the egg whites and apple cider vinegar. Beat with a hand mixer until the mixture is thick and crumbly.
Step 4
Pour in the boiling water while mixing, and beat for about 30 seconds until the dough comes together and feels like soft modeling clay. Stop as soon as it is combined, since overmixing can make the bread dense.
Step 5
With wet hands, divide the dough in half and shape each piece into a baguette about 10 inches long. Place them on the baking sheet with plenty of space between them and make 4 shallow diagonal scores across the top of each.
Step 6
Bake on the lower rack for 45-50 minutes, until the crust is firm and golden and the baguettes sound hollow when tapped on the bottom.
Step 7
Cool completely on a wire rack before slicing so the inside can finish setting.

Tips
Check Your Psyllium Husk Brand
From my experience, you want to look for a blonde or light-colored psyllium husk powder. Certain brands react to baking powder and heat by turning your baked bread a bright purple color.
The purple color is completely harmless to eat, but it can look unappetizing on the dinner table. Using a pale, finely ground powder guarantees your baguettes come out with a normal golden color.
Use Truly Boiling Water
I recommend using water that is at a rolling boil right when you pour it into the bowl. Hot tap water or warm water simply will not get the job done here.

Psyllium husk needs intense heat to activate, swell up, and absorb the liquid properly. If the water is not hot enough, your dough will feel grainy and the baked loaf will turn out heavy and wet inside.
Keep Your Hands Wet While Shaping
This low carb dough is very sticky and can be tricky to shape with dry hands. My favorite trick here is to keep a small bowl of water right beside your workspace.
Dip your palms into the water before you pick up the dough and roll it into logs. The thin layer of moisture keeps the dough from clinging to your skin and gives you a smooth, clean crust.

Frequently Asked Questions
Can I use whole psyllium husks instead of powder?
You need finely ground powder because whole husks will not soak up the liquid quickly enough, which leaves the dough too wet.
If you only have whole husks, simply grind them in a clean spice grinder or blender until they turn into a fine powder.
