Giving up traditional bread is one of the hardest parts of changing the way you eat. I really missed having a warm slice with my lunch or dinner.
That is why I created this keto pesto swirl bread. It has the savory taste of fresh basil and garlic baked right into the loaf.

Because this bread is completely low carb and keto friendly, you can enjoy a thick slice without worrying about extra carbs.
The texture turns out soft and dense, so it holds together well when you slice it. You can toast it, dip it in soup, or use it for a sandwich.
It is simple to mix up in a bowl, and the green swirl on top looks fantastic on the table.

Recipe Ingredients
- 2 cups Almond Flour
- 2 tbsp Coconut Flour
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 tsp Garlic Powder
- 5 Large Eggs
- 1/2 cup Sour Cream
- 1/4 cup Unsalted Butter, Melted
- 1 cup Shredded Mozzarella Cheese
- 1/2 cup Grated Parmesan Cheese, Divided
- 1/3 cup Basil Pesto
- 2 tbsp Pine Nuts, Optional
How To Make
Step 1
Preheat the oven to 350°F and line an 8.5×4.5-inch loaf pan with parchment paper.
Step 2
In a large bowl, whisk together the almond flour, coconut flour, baking powder, salt and garlic powder.
Step 3
In a separate bowl, whisk the eggs, sour cream and melted butter until smooth. Stir the wet mixture into the dry ingredients, then fold in the mozzarella and 1/4 cup of the parmesan. The batter will be thick.
Step 4
Spread half of the batter into the pan and dollop half of the pesto over it. Add the remaining batter, dollop the rest of the pesto on top and swirl through both layers with a skewer in a figure eight pattern.
Step 5
Sprinkle with the remaining parmesan and the pine nuts. Bake for 45 to 50 minutes, tenting with foil after 25 minutes, until golden and a toothpick comes out clean.
Step 6
Cool in the pan for 15 minutes, then transfer to a rack. Slice once cooled and enjoy it toasted, with soup or as the ultimate grilled cheese bread.

Tips
Use a Thick Pesto
I recommend using a thick, dense pesto rather than a runny or oily one.
If your pesto has a pool of oil sitting on top, stir it well and spoon off any extra oil before adding it to your loaf.
Too much loose oil will seep directly into the almond flour and leave you with soggy pockets instead of neat ribbons.
Bring Wet Ingredients to Room Temperature
Take your eggs and sour cream out of the fridge about thirty minutes before you start baking.

If they are cold, the melted butter will instantly firm up into tiny solid lumps when you whisk them together.
Room temperature ingredients blend into a smooth mixture that helps the bread rise evenly in the oven.
Be Gentle When You Swirl
When you swirl the batter with your skewer, make just two or three gentle figure eight passes through the pan.
Over-swirling blends the pesto completely into the dough, which turns the loaf entirely green instead of leaving visible swirls.
Make sure your skewer reaches deep enough to catch the bottom layer so every slice has great flavor throughout.

Frequently Asked Questions
Can I replace the coconut flour with more almond flour?
Yes, you can swap it out if you do not have coconut flour in your pantry.
Use an extra half cup of almond flour instead, because coconut flour absorbs much more liquid than almond flour.
