Sometimes you just want a slice of rich chocolate cake that does not mess with your daily carb limits.

I created this keto cottage cheese flourless chocolate cake for moments when you want something sweet and rich without all the sugar.
Blending cottage cheese into the batter might sound a bit unusual, but it gives the cake an incredible fudge texture.

Because it uses no flour at all, it stays naturally low carb and keto friendly. That means you can satisfy your chocolate cravings while keeping your energy steady.
You simply blend the ingredients together, bake it in the oven, and let it chill before slicing.

Recipe Ingredients
- 6 oz Sugar-Free Dark Chocolate, Chopped
- 1/2 cup Unsalted Butter
- 1 cup Full-Fat Cottage Cheese
- 4 Large Eggs, Room Temperature
- 1/2 cup Granulated Erythritol Sweetener
- 1/4 cup Unsweetened Cocoa Powder
- 1 tsp Instant Espresso Powder
- 1 tsp Vanilla Extract
- 1/8 tsp Salt
How To Make
Step 1
Preheat the oven to 325°F. Grease an 8-inch springform pan and line the bottom with parchment paper.
Step 2
Melt the chocolate and butter together in the microwave in 30-second bursts, stirring between each, until smooth. Let it cool for 5 minutes.
Step 3
Blend the cottage cheese until silky smooth. Add the eggs, sweetener, cocoa powder, espresso powder, vanilla and salt and blend until combined.
Step 4
With the blender on low, pour in the melted chocolate mixture and blend just until the batter is glossy and uniform.
Step 5
Pour into the prepared pan and smooth the top. Bake for 30 to 35 minutes, until the edges are set and the center has a slight wobble.
Step 6
Cool completely in the pan, then refrigerate for at least 2 hours to firm up. Serve chilled or at room temperature, dusted with cocoa powder or topped with whipped cream.

Tips
Blend the Cottage Cheese Until Completely Smooth
I recommend blending the cottage cheese by itself before you toss in any other ingredients. You want to see every tiny curd disappear completely until it looks like thick cream.
If you skip this step, those curds will stay in the batter and show up as little white specks in your finished cake.
Taking an extra minute to get it totally silky ensures your cake has a rich, velvety texture instead of a grainy bite.
Match the Temperature of the Chocolate and Eggs
I’ve found that temperature makes a huge difference in how the chocolate mixes into the batter. If your melted chocolate is too hot, it can start cooking your eggs the moment you pour it in.

Cold eggs straight from the fridge will cause the melted chocolate to stiffen and turn lumpy.
Let the warm chocolate cool for a few minutes, and make sure your eggs sit on the counter until they are at room temperature.
Powder Your Sweetener to Prevent Grittiness
You’ll get the best results if you use powdered erythritol instead of coarse granulated crystals. Granulated sweetener has a hard time dissolving in this type of low carb batter.
If you only have granulated sweetener on hand, you can pulse it in a clean blender or spice grinder for a few seconds first.
This simple step prevents the sweetener from settling into a crunchy texture in your finished dessert.

Frequently Asked Questions
Will the cake taste like cottage cheese?
Not at all, because the dark chocolate and cocoa powder completely cover the mild dairy flavor.
Blending it thoroughly also removes all the curds, so you end up with a rich texture like chocolate cheesecake or fudge.
