Keto Cottage Cheese Crumb Cake

Whenever I pour a fresh cup of coffee in the morning, I always want a little slice of bakery cake to go with it.

Traditional coffee cakes are loaded with regular flour and sugar, which does not work when you want to avoid sugar spikes.

Recipe Ingredients

For the Crumb Topping

  • 1 cup Almond Flour
  • 1/3 cup Brown Sugar Substitute
  • 1 tsp Ground Cinnamon
  • 4 tbsp Cold Unsalted Butter, Cubed
  • 1 pinch Salt

For the Cake

  • 1 1/2 cups Almond Flour
  • 2 tbsp Coconut Flour
  • 1/2 cup Granulated Erythritol Sweetener
  • 2 tsp Baking Powder
  • 1/4 tsp Salt
  • 3 Large Eggs, Room Temperature
  • 2/3 cup Full-Fat Cottage Cheese
  • 1/4 cup Unsalted Butter, Melted
  • 2 tsp Vanilla Extract

How To Make

Step 1

Preheat the oven to 350°F. Grease an 8×8-inch baking pan and line it with parchment paper.

Step 2

Make the crumb topping by mixing the almond flour, brown sugar substitute, cinnamon and salt. Rub in the cold butter with your fingertips until large, clumpy crumbs form, then refrigerate while you make the cake.

Step 3

Blend the cottage cheese until smooth. Whisk it with the eggs, melted butter and vanilla in a large bowl.

Step 4

In another bowl, whisk the almond flour, coconut flour, sweetener, baking powder and salt. Stir into the wet ingredients until a thick batter forms.

Step 5

Spread the batter into the pan and scatter the crumb topping evenly over the top, pressing it in very gently.

Step 6

Bake for 35 to 40 minutes, until the crumbs are golden and a toothpick in the center comes out clean. Tent with foil after 25 minutes if the topping browns too fast.

Step 7

Cool in the pan for at least 30 minutes so the cake sets and the crumbs crisp up before slicing into squares.

Tips

Blend the Cottage Cheese Completely Smooth

From my experience, you want the cottage cheese to look just like sour cream before you mix it with the other ingredients. Use a small food processor or an immersion blender so there are zero curds left.

If you leave any small lumps behind, they will not melt away during baking. That can leave little wet pockets inside your cake instead of a soft, even texture.

Keep the Crumb Topping Butter Cold

You’ll get the best results if you keep your butter in the fridge right until the moment you cut it into cubes. Cold butter is the secret to getting those big, bakery style crumbs.

If the butter gets warm from your fingertips, the mixture will turn into a greasy paste instead of loose clumps. I recommend popping the finished crumb bowl back in the fridge while you put together the cake batter.

Measure the Coconut Flour Carefully

Coconut flour absorbs a huge amount of liquid compared to other flours. Even one extra teaspoon can make this low carb cake turn out dry and heavy.

I’ve found that spooning the flour into your measuring spoon and sweeping it flat gives the best result. Never scoop directly from the bag with the measuring spoon, because that packs down too much flour.

Frequently Asked Questions

Do I really need to blend the cottage cheese?

Yes, blending creates a silky batter and keeps visible white curds from showing up in your baked cake.

A quick pulse in a small food processor or personal blender gives the cake a smooth, uniform crumb without altering the taste.
