There is nothing quite like the smell of warm cinnamon baking in the kitchen on a quiet morning.
Today I want to share my recipe for keto cottage cheese cinnamon swirl bread. It has become one of my favorite things to bake when I want a cozy treat without all the sugar.

Finding good baked goods can be tricky when you follow a low carb lifestyle. A lot of traditional sweet breads are packed with carbs that spike your blood sugar.
This loaf is completely low carb and keto friendly, but it still has a soft texture and a rich cinnamon ribbon through the middle.
Blending cottage cheese right into the batter keeps the crumb moist and adds a nice boost of protein. You cannot taste the cheese at all once it bakes.
It is simple to make and pairs wonderfully with a hot cup of coffee or tea.
Why You’ll Love This Recipe
Bakery Style Flavor – The sweet cinnamon swirl gives every bite the cozy taste of a classic coffee shop pastry.
Incredible Moisture – Blended cottage cheese keeps the crumb perfectly tender without drying out like other keto breads.

Keto Friendly Treat – You get all the comfort of traditional sweet bread without breaking your low carb lifestyle.
Added Protein – Full-fat cottage cheese and whole eggs give every thick slice a wholesome boost of natural protein.
Recipe Ingredients
For the Bread
- 1 cup Full-Fat Cottage Cheese
- 3 Large Eggs
- 1/4 cup Butter, Melted
- 2 tsp Vanilla Extract
- 2 cups Blanched Almond Flour
- 1/4 cup Coconut Flour
- 1/3 cup Granulated Keto Sweetener
- 1 tbsp Baking Powder
- 1/4 tsp Sea Salt
For the Cinnamon Swirl
- 3 tbsp Golden Keto Sweetener
- 1 tbsp Ground Cinnamon
- 2 tbsp Butter, Melted
How To Make
Step 1
Preheat the oven to 350°F. Line an 8.5 x 4.5 inch loaf pan with parchment paper, leaving some overhang on the long sides for easy lifting.
Step 2
Blend the cottage cheese, eggs, 1/4 cup melted butter and vanilla extract in a blender until completely smooth.
Step 3
In a large bowl, whisk together the almond flour, coconut flour, granulated sweetener, baking powder and sea salt. Pour in the blended mixture and stir until a thick, smooth batter forms.
Step 4
In a small bowl, stir together the golden sweetener, cinnamon and 2 tbsp melted butter until it forms a loose paste.
Step 5
Spread half of the batter into the prepared pan and drizzle half of the cinnamon mixture over it. Add the remaining batter, then drizzle the rest of the cinnamon mixture on top.
Drag a toothpick or the handle of a spoon through the batter in a zigzag pattern to create the swirl.
Step 6
Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean. Tent the pan loosely with foil after 35 minutes if the top is browning too quickly.
Step 7
Cool the bread in the pan for 15 minutes, then lift it out with the parchment and cool completely on a wire rack before slicing.

Tips
Blend the Wet Mixture Completely Smooth
From my experience, you need to run your blender on high until the cottage cheese curds completely disappear.
If any tiny white curds remain, they will melt during baking and leave gummy pockets inside your bread.
You want a texture that looks like smooth, rich pancake batter before you add it to the dry bowl.
Spoon and Level the Coconut Flour
I recommend using a spoon to fluff your coconut flour before gently scooping it into your measuring cup.

Coconut flour acts like a sponge and absorbs a huge amount of liquid.
If you scoop straight from the bag and pack it down tightly, your bread will turn out dry and dense instead of tender.
Let the Batter Rest Before Swirling
After stirring the wet and dry ingredients together, I’ve found that letting the bowl sit for about three minutes makes a big difference.
This brief rest gives the coconut flour time to soak up moisture and thicken the batter up properly.
A thicker batter easily supports the cinnamon paste so the swirl stays suspended in the middle instead of sinking to the bottom.

Frequently Asked Questions
Will the bread taste like cottage cheese?
Blending the wet ingredients completely removes the curd texture and creates a smooth liquid base.
Once it bakes, you will only taste sweet cinnamon and rich vanilla without any cheesy flavor at all.
