Pizza is usually one of the hardest things to give up when you switch to a low carb diet.
I missed grabbing a warm, cheesy slice on busy weeknights, so I started making this keto pepperoni pizza bread at home.

It tastes just like a classic stuffed pizza roll, but it keeps things completely keto friendly.
The dough bakes up golden on the outside and stays soft inside, holding all the melted cheese and pepperoni together.
You get all the comfort of real bakery bread without all the heavy carbs that slow you down.

Recipe Ingredients
For the Dough
- 2 cups Shredded Mozzarella Cheese
- 2 oz Cream Cheese
- 1 1/4 cups Almond Flour
- 1 tsp Baking Powder
- 1 tsp Italian Seasoning
- 1 Large Egg
For the Filling
- 1/3 cup Sugar-Free Marinara Sauce, Plus More For Dipping
- 1 cup Shredded Mozzarella Cheese
- 1/4 cup Grated Parmesan Cheese
- 3 oz Sliced Pepperoni
For the Topping
- 2 tbsp Butter, Melted
- 1/2 tsp Garlic Powder
- 1 tbsp Grated Parmesan Cheese
How To Make
Step 1
Preheat the oven to 375°F and line a baking sheet with parchment paper.
Step 2
Microwave 2 cups mozzarella and the cream cheese for 1 minute, stir, then heat for another 30 seconds until melted and smooth.
Step 3
Stir in the almond flour, baking powder and Italian seasoning. Let it cool for 1 to 2 minutes, then add the egg and knead until a smooth dough forms.
Step 4
Roll the dough between 2 sheets of parchment into a 10×13-inch rectangle. Spread the marinara thinly over the dough, leaving a 1-inch border.
Sprinkle with 1 cup mozzarella and the parmesan, then layer the pepperoni slices evenly on top.
Step 5
Using the parchment to help, roll the dough up tightly from the long side. Pinch the seam closed, tuck the ends under and place it seam side down on the baking sheet.
Step 6
Mix the melted butter with the garlic powder and brush it over the top, then sprinkle with parmesan. Snip a few small slits on top with kitchen shears and bake for 22 to 28 minutes until deep golden.
Step 7
Rest for 10 minutes before slicing so the cheese sets. Serve with warm marinara for dipping.

Tips
Pat the Pepperoni Dry First
From my experience, pepperoni releases quite a bit of oil as it bakes in the oven.
I recommend pressing the slices between paper towels before placing them on the dough. This keeps the inside of the bread from getting overly greasy or soggy.
It makes a big difference in how well the roll holds together after baking.
Reheat the Dough if It Gets Stiff
You’ll get the best results if you work quickly after mixing the cheese and almond flour together.

If the dough cools down too much while you knead it, it can turn stiff and become hard to shape.
My favorite trick here is to pop the dough ball back in the microwave for 10 to 15 seconds. That quickly softens the mozzarella so you can roll it out smoothly without tears.
Keep the Sauce Layer Very Thin
I’ve found that using too much tomato sauce inside the roll makes the dough soggy.
Stick to a very thin spread and make sure you leave that full border around the edges.
You can always warm up extra sauce in a small bowl to dip each slice into at the table.

Frequently Asked Questions
What should I do if the dough is too sticky to roll?
If the melted cheese is still very warm, the dough will feel soft and stick to your hands.
Simply place the dough ball in the refrigerator for about 10 minutes so the cheese can firm up and become easier to handle.
