For the Dough
- 2 cups Shredded Mozzarella Cheese
- 2 oz Cream Cheese
- 1 1/4 cups Almond Flour
- 1 tsp Baking Powder
- 1 tsp Italian Seasoning
- 1 Large Egg
For the Filling
- 1/3 cup Sugar-Free Marinara Sauce, Plus More For Dipping
- 1 cup Shredded Mozzarella Cheese
- 1/4 cup Grated Parmesan Cheese
- 3 oz Sliced Pepperoni
For the Topping
- 2 tbsp Butter, Melted
- 1/2 tsp Garlic Powder
- 1 tbsp Grated Parmesan Cheese
Preheat the oven to 375°F and line a baking sheet with parchment paper.
Microwave 2 cups mozzarella and the cream cheese for 1 minute, stir, then heat for another 30 seconds until melted and smooth.
Stir in the almond flour, baking powder and Italian seasoning. Let it cool for 1 to 2 minutes, then add the egg and knead until a smooth dough forms.
Roll the dough between 2 sheets of parchment into a 10x13-inch rectangle. Spread the marinara thinly over the dough, leaving a 1-inch border.
Sprinkle with 1 cup mozzarella and the parmesan, then layer the pepperoni slices evenly on top. Using the parchment to help, roll the dough up tightly from the long side. Pinch the seam closed, tuck the ends under and place it seam side down on the baking sheet.
Mix the melted butter with the garlic powder and brush it over the top, then sprinkle with parmesan. Snip a few small slits on top with kitchen shears and bake for 22 to 28 minutes until deep golden.
Rest for 10 minutes before slicing so the cheese sets. Serve with warm marinara for dipping.
