How To Make
Step 1

Tips
Melt the Chocolate and Butter Separately
Don’t try to melt the butter and chocolate together at the same time. Melt them separately first, then combine. Sugar free dark chocolate can seize up or get grainy if it overheats, and butter melts way faster than chocolate.
For the chocolate, I like to microwave it in 20 second bursts, stirring between each one. Once it’s about 80% melted, just keep stirring and the residual heat will finish the job without scorching it.
Once both are melted and smooth, whisk them together. You’ll get a much glossier, more even brownie batter this way.
Powder Your Allulose If It Isn’t Already
If your allulose is granulated and not powdered, run it through a blender or food processor for about 30 seconds before using it. Granulated allulose doesn’t dissolve as easily as regular sugar, especially in a thick batter like this brownie layer.

You’ll feel gritty little crystals in the finished bars if you skip this step. Powdering it yourself takes almost no effort and makes a big difference in the final texture.
Actually Freeze the Brownie Layer
Don’t skip putting the brownie layer in the freezer while you make the cookie dough. It needs about 10 to 15 minutes in there so it firms up enough to hold the cookie layer on top without the two mixing together.
If the brownie batter is still soft when you add the cookie dough, the two layers will blend into each other and you’ll lose that clean brookie look. A firm brownie base keeps everything separated and gives you those distinct layers when you slice.
