- 3/4 cup Almond Flour
- 3 tbsp Cocoa Powder
- 1/4 cup Powdered Allulose
- 3 tbsp Melted Butter
- 1/4 tsp Salt

- 4 oz Sugar Free Dark Chocolate, melted
- 2/3 cup Powdered Allulose
- 2 large Eggs
- 1 tsp Vanilla Extract
- 1/2 cup Almond Flour
- 1/4 cup Cocoa Powder
- 1/4 tsp Salt
For the Cream Layer
- 6 oz Cream Cheese, softened
- 1/4 cup Powdered Allulose
- 1/2 cup Heavy Cream
- 1 tsp Vanilla Extract
How To Make
Step 1
Preheat oven to 350F and line a 9×9 pan with parchment. Mix the cookie crumble ingredients into a sandy crumbly mixture and spread on a baking sheet.
Step 2
Bake the crumbles for 8 to 10 minutes until dry and crisp. Let cool fully, then break into small chunks resembling crushed cookies.
Step 3
Whisk together melted butter, melted chocolate, powdered allulose, eggs, and vanilla until glossy.
Step 4
Fold in almond flour, cocoa powder, and salt to form a thick batter. Spread into the prepared pan and bake for 22 to 25 minutes until set but fudgy.
Step 5
Cool the brownies completely in the pan.

Beat the cream cheese and powdered allulose until smooth. In a separate bowl, whip the heavy cream and vanilla to stiff peaks, then fold into the cream cheese.

Tips
Melt the Chocolate and Butter Separately Then Combine
Don’t try to melt the chocolate and butter together in the same bowl. The butter melts way faster and can cause the chocolate to seize up into a clumpy mess.
Melt them in separate bowls, let the chocolate cool for about a minute, then whisk them together. This gives you that smooth, glossy brownie base without any grainy bits.
If you’re using the microwave for the chocolate, go in 20-second bursts and stir between each one. Sugar free dark chocolate burns faster than regular chocolate.
Make Sure the Cookie Crumbles Are Fully Cooled and Dry
The crumbles need to be completely cooled and crispy before you break them up. If they still feel soft or warm, give them more time. They’ll crisp up more as they cool down.

If they’re even slightly soft when you fold them into the cream layer, they’ll absorb moisture and turn mushy instead of giving you that crunchy cookie texture. That crunch is what makes these bars special, so don’t rush this step.
Whip the Heavy Cream in a Cold Bowl
Before you whip the heavy cream, put your mixing bowl and whisk in the freezer for about 10 minutes. Cold equipment makes the cream whip up faster and hold stiff peaks much better.
This matters a lot here because the cream layer needs to be thick and sturdy enough to support the cookie crumbles on top. If the whipped cream is weak or floppy, the whole top layer will flatten out in the fridge instead of staying fluffy.

Can I use erythritol or monk fruit instead of allulose?
You can, but allulose gives the best texture here because it doesn’t crystallize the way erythritol does. Erythritol can sometimes create a gritty or cooling sensation, especially in the cream layer, which isn’t ideal.
If you do swap, powdered monk fruit or an erythritol-monk fruit blend will work best. Just keep in mind that sweetness levels vary between brands, so taste as you go and adjust to your liking.
