I have been experimenting with cottage cheese in baked goods lately, and the results have been surprising.
Today I am sharing my keto cottage cheese brown butter pecan cookies, which turn out soft, rich, and full of flavor.

Blending the cottage cheese gives the dough moisture and structure without needing any regular flour or sugar.
Because this treat is completely low carb and keto friendly, you can enjoy a warm cookie with your coffee without worrying about extra carbs.
The nutty brown butter paired with toasted pecans makes these feel like a special bakery treat right from your own kitchen.
Why You’ll Love This Recipe
Rich Brown Butter – Browning the butter gives these keto cookies a deep, nutty caramel flavor you will love.
Chewy Soft Texture – Blended cottage cheese adds protein and keeps every bite soft instead of dry or crumbly.

True Caramel Sweetness – Brown monk fruit brings warm bakery sweetness without kicking you out of ketosis.
Toasty Pecan Crunch – Freshly toasted pecans provide a buttery crunch that pairs naturally with the soft dough.
Recipe Ingredients
- 1/3 cup Unsalted Butter
- 3/4 cup Pecans, chopped
- 1/2 cup Full-Fat Cottage Cheese
- 1/2 cup Brown Monk Fruit Sweetener
- 1 Large Egg Yolk
- 1 1/2 tsp Vanilla Extract
- 2 cups Blanched Almond Flour
- 1/2 tsp Baking Powder
- 1/4 tsp Xanthan Gum
- 1/4 tsp Salt
- 1/4 tsp Flaky Sea Salt
How To Make
Step 1
Melt the butter in a light-colored saucepan over medium heat, swirling often. Cook for 4 to 6 minutes, until it smells nutty and small brown bits form on the bottom. Pour into a large bowl, scraping in the brown bits, and let it cool for 15 minutes.
Step 2
While the butter cools, toast the chopped pecans in a dry skillet over medium-low heat for 4 to 5 minutes, stirring often, until fragrant. Set aside to cool.
Step 3
Blend the cottage cheese in a small blender or food processor until completely smooth.
Step 4
Whisk the brown sweetener into the cooled brown butter, then whisk in the blended cottage cheese, egg yolk, and vanilla until smooth.
Step 5
Add the almond flour, baking powder, xanthan gum, and salt, and stir until a soft dough forms. Fold in the toasted pecans and chill the dough for 30 minutes.
Step 6
Preheat the oven to 350°F and line a baking sheet with parchment paper. Scoop the dough into 1 1/2 tbsp balls and flatten each one to about 1/2 inch thick.
Step 7
Bake for 12 to 14 minutes, until deeply golden at the edges. Sprinkle with flaky sea salt and let cool on the baking sheet for 15 minutes before moving.

Tips
Blend the Cottage Cheese Until Completely Smooth
Make sure to run your blender until the cottage cheese looks completely silky with no curds left.
Any leftover lumps will create wet spots inside the cookies instead of melting into the dough.
From my experience, scraping down the sides of the blender cup once or twice makes a big difference.
Cool the Brown Butter Before Mixing
Give your brown butter the full 15 minutes to cool down before you whisk in the egg yolk.

If the melted butter is still hot, it can cook the egg yolk and ruin the smooth base of your dough.
You’ll get the best results if the butter feels warm to the touch rather than steaming hot.
Flatten the Cookies Before Baking
Keto cookies do not spread out in the oven the way traditional cookies do.
Shape your dough balls and press them down to about half an inch thick before sliding the tray into the oven.
The shape you make on the baking sheet is the exact shape they will keep once baked.

Will these cookies taste like cottage cheese?
Not at all! Blending the cottage cheese makes it completely smooth, and the rich brown butter and toasted pecans mask any savory dairy flavor.
It simply adds moisture and protein, giving the cookies a wonderfully soft, tender center.
