Tips
Blend Until Completely Smooth
I’ve found that blending the cottage cheese until all the curds disappear is the secret to a great texture. You want the wet base to look like smooth pancake batter before you stir in the dry ingredients.
If you leave visible lumps of cottage cheese, they will melt into watery pockets while baking. Taking thirty seconds to blend it thoroughly keeps every bite light and evenly baked.
Use a Silicone Pan If You Can
Egg and cheese mixtures stick very easily to metal pans, even when you grease them well. I recommend using a silicone mini muffin pan so the bites pop right out without tearing.

If you only have a metal tin, brush each cup with melted butter or oil instead of using a quick cooking spray. That thicker coating keeps the cheese from clinging to the metal.
Shred Your Own Mozzarella
You will get the best results if you buy a block of mozzarella and shred it yourself. Store bought shredded cheese is coated in powdery starch to keep it from clumping in the bag.
That extra powder adds unnecessary carbs and stops the cheese from melting cleanly. Freshly grated cheese melts much better and gives you that golden, bubbly pizza crust on top.

Frequently Asked Questions
Can I use low fat cottage cheese instead of full fat?
You can use low fat cottage cheese, but full fat gives the best texture and rich flavor for a low carb lifestyle.
Low fat varieties also tend to hold more water, which might make your pizza bites slightly soggy instead of firm.
