- 1/2 cup Powdered Erythritol
- 1 tsp Vanilla Extract
- 1 tsp Orange Zest
For the Drizzle
- 1/4 cup Sugar Free White Chocolate Chips
- 1 tsp Coconut Oil
How To Make
Step 1
Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides.
Step 2
Whisk the melted butter with the brown sweetener, then whisk in the eggs, vanilla and orange zest until smooth.
Step 3
Add the almond flour, coconut flour, baking powder, ginger and salt and stir until combined. Fold in 1/3 cup of the dried cranberries and 1/3 cup white chocolate chips.
Step 4
Spread the batter in the pan and bake for 22 to 26 minutes, until golden and set in the center. Cool completely in the pan.
Step 5
Beat the cream cheese, softened butter, powdered erythritol, vanilla and orange zest until fluffy. Spread evenly over the cooled blondie base.
Step 6
Sprinkle the remaining cranberries over the frosting. Melt the white chocolate chips for the drizzle with the coconut oil in 20-second bursts, stir until smooth and drizzle over the top.
Step 7
Chill for 30 minutes to set. Lift out, slice into 8 rectangles, then halve each one diagonally to make 16 triangles.

Tips
Melt the White Chocolate Carefully
Sugar free white chocolate burns much faster than regular chocolate. From my experience, heating it in short 15 to 20 second intervals is the safest approach.
Stir thoroughly after each burst, even if the chips still look solid. The residual heat in the bowl will finish melting them smoothly without causing the chocolate to seize.
Cool the Base Completely
Make sure the baked blondie base is entirely cold before you spread on the frosting.

If the base is even slightly warm, the butter and cream cheese will melt into an oily layer. I recommend popping the pan into the fridge for 20 minutes if you want to speed up the cooling process.
Use Finely Ground Almond Flour
You will get the best results if you pick blanched, super-fine almond flour instead of coarse almond meal.
Almond meal contains bits of dark skin that make low carb bars heavy and gritty. Fine flour creates that soft, chewy texture you expect from a coffeehouse blondie.

Frequently Asked Questions
Can I use regular dried cranberries instead of sugar free ones?
Regular dried cranberries are almost always packed with added cane sugar, which will quickly raise the carb count of your treats.
To keep the recipe strictly low carb, look for brands sweetened with erythritol or allulose, or you can dry fresh cranberries at home using your oven.
