Keto Pretzel Buns

One of the hardest things about eating a low carb diet is giving up soft, bakery-style bread.

That is why I created these keto pretzel buns, and they have quickly become a staple in my kitchen.

Chewy homemade keto pretzel buns

They have that chewy crust and deep golden color that you expect from real pretzels, but without all the heavy grains.

Because they are low carb and keto friendly, you can enjoy a hearty burger or sandwich without feeling weighed down.

You only need a few simple pantry staples to make them, and the whole batch comes together quickly on a single baking sheet.

Why You’ll Love This Recipe

Authentic Pretzel Flavor – The quick baking soda wash gives these buns that iconic, savory pretzel flavor you miss on keto.

Perfect Chewy Texture – Fathead dough creates a soft, chewy crumb that mimics real bakery bread without all the carbs.

Sturdy for Juicy Burgers – These dense rolls hold up amazingly well against heavy meats and sauces without falling apart.

No Yeast or Rising – You can bake fresh, golden buns in under thirty minutes without waiting hours for dough to rise.

Recipe Ingredients

For the Dough

  • 3 cups Shredded Mozzarella Cheese
  • 3 oz Cream Cheese
  • 1 1/2 cups Almond Flour
  • 2 tsp Baking Powder
  • 2 Large Eggs

For the Pretzel Topping

  • 1/4 cup Hot Water
  • 1 tbsp Baking Soda
  • 1 Large Egg, Beaten
  • 2 tsp Coarse Sea Salt

How To Make

Step 1

Preheat the oven to 375°F and line a baking sheet with parchment paper.

Step 2

Microwave the mozzarella and cream cheese for 1 minute, stir, then heat for another 30 to 40 seconds until melted and smooth.

Step 3

Stir in the almond flour and baking powder. Let it cool for 1 to 2 minutes, then add the eggs and knead with your hands until a smooth dough forms.

Step 4

With oiled hands, divide the dough into 6 pieces and roll each into a smooth ball. Flatten them slightly into discs about 3 1/2 inches wide and 1 inch thick and place them on the baking sheet.

Step 5

Dissolve the baking soda in the hot water and brush it generously over the tops and sides of the buns. Wait 2 minutes, then brush with the beaten egg.

Snip a cross on top of each bun with kitchen shears and sprinkle with coarse sea salt.

Step 6

Bake for 18 to 22 minutes until deep golden brown with that classic pretzel color.

Step 7

Cool for 10 minutes before splitting. Use them for burgers, bratwurst or pulled pork sandwiches.

Tips

Reheat the Dough if the Cheese Hardens

If your melted cheese cools down too quickly while you mix, it will turn firm and refuse to blend with the almond flour.

When this happens, pop the whole bowl back into the microwave for about 10 to 15 seconds to soften it up again.

I recommend checking the dough with your finger before adding the eggs. It should be warm to the touch, not hot, so you do not accidentally scramble them.

Use Finely Ground Almond Flour

For the best texture, always choose super fine blanched almond flour rather than almond meal.

Fluffy salted keto pretzel buns

Almond meal contains coarse brown skins that make the buns feel gritty and heavy.

A fine flour melts into the cheese mixture smoothly. This gives your buns an airy, bread like crumb that holds together well for sandwiches.

Wait Two Minutes After the Soda Wash

After you brush on the warm baking soda liquid, give the buns a full two minutes to rest before you add the egg wash.

This quick pause allows the baking soda water to soak into the dough surface, which creates the deep pretzel flavor and chewy crust.

If you brush the egg wash on right away, the liquids blend together and dilute that rich pretzel color you want.

Frequently Asked Questions

Can I boil these buns in baking soda water like traditional pretzels?

You should not boil them because this cheese-based dough will dissolve and lose its shape in a boiling pot.

Brushing the warm baking soda mixture directly onto the raw dough creates the same deep golden color and classic pretzel taste without ruining the buns.
