Strawberry pretzel salad was always one of my favorite desserts at family gatherings when I was growing up.
The classic version is packed with sugar and carbs, so I wanted to make a version that fits my current lifestyle.

These keto strawberry pretzel salad bars give you that same amazing flavor while keeping things completely low carb and keto friendly.
I use a buttery, salted pecan crust instead of regular pretzels to keep the carbs down without losing that signature salty crunch.
The mix of rich cream and fresh fruit makes this a dessert you will want to keep in your fridge all week long.

Recipe Ingredients
For the Salted Pecan Crust
- 1 cup Finely Chopped Pecans
- 1 cup Almond Flour
- 2 tbsp Powdered Erythritol
- 5 tbsp Butter, Melted
- 1/2 tsp Sea Salt
For the Cream Layer
- 8 oz Cream Cheese, Softened
- 1/3 cup Powdered Erythritol
- 1 tsp Vanilla Extract
- 1 cup Heavy Cream
For the Strawberry Layer
- 1 box (0.3 oz) Sugar Free Strawberry Gelatin
- 1 cup Boiling Water
- 1/2 cup Cold Water
- 1 1/2 cups Sliced Fresh Strawberries
How To Make
Step 1
Preheat the oven to 350°F and lightly grease an 8×8-inch baking dish.
Step 2
Mix the pecans, almond flour, erythritol, sea salt and melted butter until evenly moistened. Press firmly into the dish and bake for 10 to 12 minutes, until golden and fragrant. Cool completely.
Step 3
Beat the cream cheese, erythritol and vanilla until smooth. In a separate bowl, whip the heavy cream to stiff peaks, then fold it into the cream cheese mixture.
Step 4
Spread the cream layer over the cooled crust, going all the way to the edges to create a seal so the gelatin cannot seep underneath. Chill for 30 minutes.
Step 5
Stir the gelatin into the boiling water for 2 minutes until fully dissolved, then stir in the cold water. Refrigerate for 20 to 30 minutes, until cool and just starting to thicken like syrup.
Step 6
Arrange the sliced strawberries over the cream layer and gently spoon the cooled gelatin over the top.
Step 7
Chill for at least 4 hours, until fully set. Slice into 16 bars and serve straight from the dish.

Tips
Press the Crust Very Firmly
I recommend using the flat bottom of a measuring cup or drinking glass to press the nut mixture into the dish. Pecans and almond flour do not have gluten, so they need extra pressure to stick together.
If you only press lightly with your fingers, the crust will crumble into loose pieces the moment you cut into the bars later on.
Cool the Crust All the Way
Make sure the baked crust is completely cold to the touch before you add the cream layer. You can even pop the pan into the fridge for 15 minutes to speed things up.

If the pan is still warm, the butter and cream cheese will melt instantly. That will turn your neat layers into a greasy, runny mess.
Seal the Edges Completely
From my experience, the most important step is spreading the cream cheese mixture all the way to the glass on all four sides. You want to make an airtight wall with no gaps anywhere.
If you leave even a tiny opening near the corners, the liquid gelatin will leak down to the bottom and make your crunchy crust soggy.

Frequently Asked Questions
Why does this recipe use pecans instead of real pretzels?
Traditional pretzels contain too many carbs for a ketogenic diet, so finely chopped pecans combined with sea salt replicate that familiar salty crunch.
This nut crust delivers the classic buttery flavor profile while keeping the dessert strictly low carb.
