Instructions
Preheat the oven to 325°F and line a 9 inch springform pan with parchment paper.
Stir almond flour, cocoa powder, shredded coconut, powdered sweetener, and melted butter. Press into the pan and bake for 10 minutes.
Beat cream cheese and allulose until smooth. Add eggs one at a time on low speed.
Mix in coconut cream, vanilla, almond extract, and shredded coconut until just combined.
Pour into the crust and bake for 45 to 55 minutes, until the cheesecake is set around the edges. Cool and chill for at least 5 hours.
Warm heavy cream until steaming, then pour over dark chocolate and stir until glossy.
Spread the ganache over the chilled cheesecake and sprinkle with chopped almonds and coconut.
