Ingredients
  

For the Crust

  • 1 cup Almond Flour
  • 1/4 cup Cocoa Powder
  • 1/3 cup Unsweetened Shredded Coconut
  • 1/4 cup Powdered Monk Fruit Sweetener
  • 5 tbsp Butter, Melted

For the Filling

  • 24 oz Cream Cheese, Softened
  • 3/4 cup Powdered Allulose
  • 3 Large Eggs
  • 1/2 cup Coconut Cream
  • 1 tsp Vanilla Extract
  • 1/2 tsp Almond Extract
  • 1/3 cup Unsweetened Shredded Coconut

For the Topping

  • 2 oz Sugar Free Dark Chocolate
  • 1/4 cup Heavy Cream
  • 1/4 cup Almonds, Chopped
  • 2 tbsp Unsweetened Shredded Coconut

Equipment

Instructions
 

  • Preheat the oven to 325°F and line a 9 inch springform pan with parchment paper.
  • Stir almond flour, cocoa powder, shredded coconut, powdered sweetener, and melted butter. Press into the pan and bake for 10 minutes.
  • Beat cream cheese and allulose until smooth. Add eggs one at a time on low speed.
  • Mix in coconut cream, vanilla, almond extract, and shredded coconut until just combined.
  • Pour into the crust and bake for 45 to 55 minutes, until the cheesecake is set around the edges. Cool and chill for at least 5 hours.
  • Warm heavy cream until steaming, then pour over dark chocolate and stir until glossy.
  • Spread the ganache over the chilled cheesecake and sprinkle with chopped almonds and coconut.
