Preheat your oven to 375F and line 10 cups of a muffin tin with parchment liners.
In a large bowl, whisk together the almond flour, baking powder, garlic powder, onion powder, salt, and black pepper.
Add the eggs, sour cream, and melted butter to the dry ingredients. Stir until a smooth, thick batter forms.
Fold in 3/4 cup of the shredded cheddar cheese, about three-quarters of the crumbled bacon, and the chopped chives, reserving the rest for topping.
Divide the batter evenly among the 10 lined muffin cups. Top each muffin with a pinch of the reserved cheddar, a few pieces of crumbled bacon, and a small sprinkle of chives.
Bake for 20 to 23 minutes, until the tops are golden and the cheese is melted and bubbly. A toothpick inserted in the center should come out clean.
Let the muffins cool in the tin for 5 minutes before serving warm. These are best fresh from the oven when the cheddar is still slightly gooey inside.
