Instructions
Melt the butter in a small saucepan over medium heat. Stir in the brown sweetener and heavy cream, then simmer for 2 minutes until smooth.
Add the dark rum, cinnamon, and pecans to the sauce. Simmer for 1 minute, remove from the heat, and refrigerate until completely cold.
Blend the heavy cream, almond milk, powdered allulose, cream cheese, banana extract, vanilla extract, xanthan gum, and sea salt until smooth.
Refrigerate the banana ice cream mixture for at least 3 hours or until thoroughly chilled.
Churn the mixture in an ice cream maker according to the manufacturer's directions until thick and creamy.
Layer the ice cream with spoonfuls of the foster pecans in a freezer-safe container. Freeze for 3 to 4 hours before scooping.
