Ingredients
  

For the Meatballs

  • 1 1/2 lb Ground Beef (80/20)
  • 1/3 cup Almond Flour
  • 1 Large Egg
  • 1 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 cup Shredded Cheddar Cheese
  • 3 tbsp Dill Pickle, finely diced

For the Special Sauce

  • 1/4 cup Mayonnaise
  • 1 tbsp Yellow Mustard
  • 1 tbsp Sugar-Free Ketchup
  • 1 tbsp Dill Pickle Relish
  • 1/2 tsp Onion Powder
  • 1/4 tsp Paprika

For the Topping

  • 1/2 cup Shredded Iceberg Lettuce
  • Sesame Seeds
  • Extra Dill Pickle Slices

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Whisk together all the special sauce ingredients in a small bowl until smooth. Refrigerate until ready to serve.
  • In a large bowl, combine the ground beef, almond flour, egg, onion powder, garlic powder, salt, pepper, shredded cheddar, and diced dill pickle. Mix gently until everything is just combined, then shape into 16 meatballs.
  • Place the meatballs on the prepared baking sheet. Bake for 20 to 22 minutes until golden brown and cooked through.
  • Remove from the oven and immediately top each meatball with a small extra pinch of shredded cheddar if desired. Let them rest for 2 minutes.
  • Arrange the meatballs on a serving platter. Drizzle the special sauce generously over the top, then finish with shredded lettuce, extra pickle slices, and a sprinkle of sesame seeds. Serve immediately.
