These keto birthday cake blondies are a fun, festive treat perfect for any celebration. Low carb and keto friendly, they're absolutely worth every bite.
Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
In a large bowl, whisk together the melted butter and monk fruit sweetener until combined. Add the eggs, vanilla extract, and butter extract. Whisk vigorously until the mixture is smooth and slightly fluffy.
Add the almond flour, baking powder, and salt. Stir with a spatula until fully combined into a thick, smooth batter.
Fold in the sugar-free white chocolate chips and 3 tablespoons of sugar-free rainbow sprinkles. Stir gently just until distributed so the sprinkles do not bleed color into the batter.
Spread the batter evenly into the prepared pan. Scatter the remaining tablespoon of sprinkles over the top and gently press them in.
