Ingredients

For the Black Sesame Paste

  • 1/3 cup Black Sesame Seeds
  • 2 tbsp Powdered Monk Fruit Sweetener
  • 1 tbsp Unsalted Butter, Melted
  • 1 tbsp Heavy Cream

For the Blondies

  • 1/2 cup Unsalted Butter, Melted
  • 3/4 cup Golden Monk Fruit Sweetener
  • 1 large Egg
  • 1 large Egg Yolk
  • 1 tsp Vanilla Extract
  • 2 cups Super-Fine Almond Flour
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 cup Sugar-Free White Chocolate Chips
  • 1 tsp Toasted Sesame Seeds

Equipment

  • spice grinder

Instructions

  • Toast the black sesame seeds in a dry skillet over medium-low heat for 3 minutes, stirring constantly, until fragrant. Let them cool slightly, then grind in a spice grinder or small blender until a damp, sandy powder forms.
Add the powdered sweetener, melted butter and heavy cream and blend again into a thick, smooth paste.
  • Preheat the oven to 350°F and line an 8x8-inch pan with parchment paper.
  • Whisk the melted butter and golden sweetener until glossy, then whisk in the egg, egg yolk and vanilla. Fold in the almond flour, baking powder and salt, then fold in the white chocolate chips.
  • Spread the batter into the pan. Dollop the black sesame paste over the top and swirl it through the batter to create a dramatic black and gold marble pattern.
  • Sprinkle the toasted sesame seeds over the surface and bake for 24 to 28 minutes, until golden at the edges and set in the center.
  • Cool completely in the pan before cutting into squares, so the nutty sesame swirl sets and the white chocolate pockets stay creamy.
