  • 1 1/3 cups Almond Flour
  • 1/4 cup Coconut Flour
  • 1/3 cup Powdered Monk Fruit Sweetener
  • 1/4 cup Unsalted Butter, Softened
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Fine Sea Salt

For the Swirl

  • 3 oz Cream Cheese, Softened
  • 2 tablespoons Powdered Monk Fruit Sweetener
  • 1/4 teaspoon Vanilla Extract
  • 1/4 cup Finely Chopped Blackberries

Instructions
 

  • Preheat the oven to 325°F and line a baking sheet with parchment paper.
  • Beat the butter and powdered monk fruit sweetener until creamy, then mix in the egg and vanilla extract.
  • Stir in the almond flour, coconut flour, baking powder, and sea salt until a scoopable dough forms.
  • In a separate bowl, mix the cream cheese, powdered monk fruit sweetener, and vanilla extract until smooth.
  • Fold the chopped blackberries gently into the cream cheese mixture.
  • Scoop the cookie dough into 12 mounds and make a shallow well in each one.
  • Spoon a small amount of blackberry cream cheese into each well.
  • Bake for 12 to 14 minutes, then cool completely so the cheesecake centers set.
