Ingredients
  

For the Crust

  • 1 1/2 cups Almond Flour
  • 1/4 cup Coconut Flour
  • 1/4 cup Powdered Monk Fruit Sweetener
  • 1/4 tsp Salt
  • 6 tbsp Butter, Melted

For the Filling

  • 24 oz Cream Cheese, Softened
  • 3/4 cup Powdered Allulose
  • 3 Large Eggs
  • 1/2 cup Sour Cream
  • 2 tsp Vanilla Extract
  • 1 tsp Lemon Zest
  • 1 tsp Fresh Sage, Very Finely Chopped

For the Swirl

  • 1 1/4 cups Blackberries
  • 2 tbsp Powdered Allulose
  • 1 tbsp Lemon Juice
  • 1/2 tsp Xanthan Gum

Equipment

Instructions
 

  • Preheat the oven to 325°F and line a 9 inch springform pan with parchment paper.
  • Mix almond flour, coconut flour, powdered sweetener, salt, and melted butter. Press into the pan and bake for 9 minutes, then cool.
  • Simmer blackberries, allulose, and lemon juice for 5 minutes, then mash and strain if you want a smoother swirl. Whisk in xanthan gum and cool.
  • Beat cream cheese and allulose until creamy. Add eggs on low speed, then mix in sour cream, vanilla, lemon zest, and sage.
  • Pour the filling into the crust and spoon blackberry sauce over the top. Swirl lightly so the berry ribbons stay visible.
  • Bake for 45 to 55 minutes, until the edges are set and the center still jiggles slightly.
  • Cool for 1 hour, then chill for at least 5 hours before serving.
