Instructions
Preheat the oven to 325°F and line a baking sheet with parchment paper.
Beat the butter and powdered allulose until creamy, then mix in the egg, vanilla extract, and lemon zest.
Stir in the almond flour, coconut flour, baking powder, and sea salt until a soft dough forms.
Fold in the blueberries gently so they do not crush too much.
Mix the crumble ingredients in a small bowl until clumpy.
Scoop the cookie dough into 12 mounds and press a little crumble over each top.
Bake for 13 to 15 minutes, until the crumble is golden and the cookies are set.
Cool fully on the baking sheet before serving.
