- 1/2 cup Chopped Roasted Almonds
- 1/4 cup Unsweetened Shredded Coconut
- 1/4 tsp Flaky Sea Salt
Line an 8x8-inch baking pan with parchment paper, leaving overhang on the sides for easy removal.
Crush the pork rinds into small, uniform pieces about the size of rice cereal. You want them crunchy but not powdered. Toss them in a bowl with the chopped roasted almonds and shredded coconut.
Melt the sugar-free dark chocolate chips and coconut oil together in a microwave-safe bowl, heating in 30-second intervals and stirring between each, until completely smooth.
Pour the melted chocolate over the pork rind mixture and stir until everything is thoroughly coated and no dry pieces remain.
Transfer the mixture to the prepared pan and press it down firmly into an even layer using the back of a spatula. Sprinkle flaky sea salt evenly over the top.
Refrigerate for at least 1 hour until fully set and firm. Lift out using the parchment overhang, then slice into 12 bars. Store in the refrigerator for up to 10 days.
