For the Cake
- 4 large Eggs, separated
- 1/3 cup Powdered Erythritol
- 1/4 cup Cocoa Powder
- 1/4 cup Almond Flour
- 1 tsp Vanilla Extract
- 1/4 tsp Cream of Tartar
- 1 pinch Salt
For the Filling
- 1 cup Heavy Whipping Cream
- 3 tbsp Powdered Erythritol
- 1 tsp Vanilla Extract
- 4 oz Cream Cheese, softened
Preheat oven to 350F. Line a 10x15 inch jelly roll pan with parchment paper and lightly grease it.
In a large bowl, beat the egg yolks with powdered erythritol and vanilla extract until thick and pale, about 3 minutes. Sift in the cocoa powder and almond flour, then fold gently until just combined.
In a separate clean bowl, beat the egg whites with cream of tartar and salt until stiff peaks form. Gently fold the egg whites into the chocolate batter in three additions, being very careful not to deflate the mixture.
Spread the batter evenly into the prepared pan. Bake for 10 to 12 minutes until the cake springs back when lightly touched. Do not overbake.
While still warm, carefully flip the cake onto a clean piece of parchment paper dusted lightly with cocoa powder. Peel off the original parchment. Starting from the short end, gently roll the cake up with the new parchment paper inside. Let it cool completely in the rolled position, about 30 minutes.
While the cake cools, beat the cream cheese until smooth. Add the heavy whipping cream, powdered erythritol, and vanilla extract. Beat on high until stiff peaks form and the filling is thick and fluffy.
Carefully unroll the cooled cake. Spread the filling evenly over the surface, leaving about a half inch border on all edges. Re-roll the cake tightly without the parchment paper this time.
Place the swiss roll seam side down on a serving plate. Refrigerate for at least 1 hour before slicing. Dust with cocoa powder before serving.
