In a bowl, whisk together the almond flour, coconut flour, erythritol, cinnamon, and salt until well combined.
Add the egg, melted butter, and vanilla extract. Stir until a thick, smooth dough forms. Let it rest for 2 minutes so the coconut flour absorbs the moisture.
Place the dough between two sheets of parchment paper and roll it out to about 1/8 inch thickness. Remove the top parchment.
