Preheat your oven to 325F and line a baking sheet with parchment paper.
In a medium bowl, combine the shredded coconut, almond flour, powdered erythritol, and salt. Stir until evenly mixed.
Add the melted coconut oil, egg white, vanilla extract, and coconut extract if using. Mix until the dough holds together and is evenly moist throughout.
Drop very small mounds of the mixture, about 1 teaspoon each, onto the prepared baking sheet. Use your fingers to lightly press each mound into a flat disc about 1/4 inch thick and 1 inch wide. Space them about 1/2 inch apart.
Bake for 14 to 18 minutes until the edges are golden brown and the tops look dry and lightly toasted.
Let cool completely on the baking sheet. They will crisp up significantly as they cool, becoming light and crunchy.
Enjoy as a cereal with unsweetened almond milk, or eat them as crunchy snack bites straight from the container. Store in an airtight container for up to 10 days.
