  • 3/4 cup Coconut Flour
  • 6 large Eggs, room temperature
  • 1/3 cup Melted Butter
  • 1/4 cup Heavy Cream
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease an 8x4-inch loaf pan with butter, then line the bottom and long sides with a strip of parchment paper.
  • In a large bowl, whisk the eggs vigorously until frothy and well beaten, about 1 minute. Add the melted butter and heavy cream, then whisk until smooth and fully combined.
  • Sift the coconut flour, baking powder, and salt into the wet ingredients. This step is important since coconut flour clumps easily. Stir gently with a spatula until a smooth, thick batter forms with no dry spots.
    Let the batter rest for 2 minutes. Coconut flour absorbs liquid slowly, and the batter will thicken slightly. If it looks very thick, that is normal.
  • Pour the batter into the prepared loaf pan and smooth the top with the back of a spoon.
  • Bake for 40 to 50 minutes, until the top is golden brown and a toothpick inserted into the center comes out clean. The bread should feel firm when pressed gently on top.
  • Let the bread cool in the pan for 10 minutes, then run a butter spatula around the edges and turn it out onto a wire rack. Allow it to cool completely, at least 45 minutes, before slicing. This bread is perfect for those who avoid nuts and works beautifully for sandwiches and toast.
