Add the cottage cheese and 2 eggs to a blender and blend until perfectly smooth with no lumps.
In a large bowl, whisk together the almond flour, psyllium husk powder, baking powder, and salt. Pour in the blended cottage cheese mixture and the melted butter. Stir until a thick dough comes together.
Let the dough rest for 5 minutes so it firms up slightly. With damp hands, divide the dough into 8 equal portions and roll each into a smooth ball. Place them on the prepared baking sheet about 2 inches apart.
Beat the remaining egg with 1 teaspoon of water. Brush the top of each roll with the egg wash for a golden, shiny finish.
Bake for 22 to 26 minutes, until the rolls are golden brown and sound slightly hollow when tapped on the bottom.
Let them cool on the baking sheet for 5 minutes before serving warm alongside butter, soups, or your favorite keto meal.
