- 1 cup Cottage Cheese (full fat)
- 2 cups Almond Flour
- 1 cup Pepper Jack Cheese, shredded
- 4 large Eggs
- 2 tbsp Psyllium Husk Powder
- 2 Jalapeño Peppers, seeded and finely diced
- 1 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1/4 tsp Smoked Paprika
Preheat your oven to 350°F. Line an 8x4 inch loaf pan with parchment paper.
Blend the cottage cheese and eggs in a blender until completely smooth.
In a large bowl, whisk together the almond flour, psyllium husk powder, baking powder, salt, and smoked paprika.
Pour the blended cottage cheese mixture into the dry ingredients. Stir until combined, then fold in the shredded pepper jack cheese and diced jalapeños until evenly distributed throughout the batter.
Let the batter rest for 5 minutes to allow the psyllium husk to absorb the moisture and thicken. Transfer the batter into the prepared loaf pan and smooth the top.
Bake for 45 to 50 minutes, until the top is golden and firm and a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then remove and transfer to a wire rack. Let it cool for at least 20 minutes before slicing.
