Ingredients
  

For the Dough

  • 1 cup Cottage Cheese (full fat)
  • 2 cups Almond Flour
  • 1 cup Shredded Mozzarella
  • 2 large Eggs
  • 2 tbsp Coconut Flour
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Salt

For the Herb Butter

  • 4 tbsp Butter, melted
  • 2 cloves Garlic, minced
  • 1 tbsp Fresh Parsley, chopped
  • 1 tsp Dried Italian Seasoning
  • 2 tbsp Grated Parmesan

Instructions
 

  • Preheat your oven to 350°F. Grease a 9-inch round cake pan or a 9x5 inch loaf pan.
  • Blend the cottage cheese and eggs in a blender until smooth.
  • In a large bowl, combine the almond flour, coconut flour, shredded mozzarella, baking powder, and salt. Pour in the blended cottage cheese mixture and stir until a thick, workable dough forms.
  • In a small bowl, stir together the melted butter, minced garlic, chopped parsley, and Italian seasoning.
  • With damp hands, pinch off pieces of dough and roll into roughly 20 small balls, each about 1 inch in diameter. Dip each ball into the herb butter mixture, coating it well, and place it into the prepared pan.
    Arrange the balls snugly in a single layer, then stack any remaining balls on top. Pour any remaining herb butter over the top.
  • Sprinkle the grated parmesan over the surface. Bake for 28 to 33 minutes, until the top is deeply golden brown and the bread feels firm when pressed.
  • Let the bread cool in the pan for 5 minutes, then invert onto a serving plate or serve directly from the pan. Pull apart into individual pieces and serve warm.
