Preheat your oven to 350°F. Grease a 9-inch round cake pan or a 9x5 inch loaf pan.
Blend the cottage cheese and eggs in a blender until smooth.
In a large bowl, combine the almond flour, coconut flour, shredded mozzarella, baking powder, and salt. Pour in the blended cottage cheese mixture and stir until a thick, workable dough forms.
In a small bowl, stir together the melted butter, minced garlic, chopped parsley, and Italian seasoning.
With damp hands, pinch off pieces of dough and roll into roughly 20 small balls, each about 1 inch in diameter. Dip each ball into the herb butter mixture, coating it well, and place it into the prepared pan.Arrange the balls snugly in a single layer, then stack any remaining balls on top. Pour any remaining herb butter over the top.
Sprinkle the grated parmesan over the surface. Bake for 28 to 33 minutes, until the top is deeply golden brown and the bread feels firm when pressed.
Let the bread cool in the pan for 5 minutes, then invert onto a serving plate or serve directly from the pan. Pull apart into individual pieces and serve warm.
