Ingredients
  

For the Crust

  • 1 1/2 cups Almond Flour
  • 1/3 cup Pecans, Finely Chopped
  • 1/4 cup Powdered Monk Fruit Sweetener
  • 1/2 tsp Cinnamon
  • 5 tbsp Butter, Melted

For the Filling

  • 24 oz Cream Cheese, Softened
  • 3/4 cup Powdered Allulose
  • 3 Large Eggs
  • 1/2 cup Sour Cream
  • 1 tbsp Orange Zest
  • 2 tbsp Orange Juice
  • 1 tsp Vanilla Extract

For the Cranberry Topping

  • 1 1/2 cups Cranberries
  • 1/3 cup Powdered Allulose
  • 1/4 cup Water
  • 1 tbsp Orange Juice
  • 1 tsp Orange Zest

Equipment

  • 9-inch springform pan

Instructions
 

  • Preheat the oven to 325°F and line a 9 inch springform pan with parchment paper.
  • Mix almond flour, pecans, powdered sweetener, cinnamon, and melted butter. Press into the pan and bake for 10 minutes.
  • Beat cream cheese and allulose until smooth. Add eggs one at a time on low speed.
  • Mix in sour cream, orange zest, orange juice, and vanilla until just combined.
  • Pour into the crust and bake for 45 to 55 minutes, until the edges are set and the center is still slightly wobbly. Cool and chill for at least 5 hours.
  • Simmer cranberries, allulose, water, orange juice, and orange zest for 8 to 10 minutes until thick and jammy.
  • Cool the cranberry topping completely, then spoon it over the cheesecake.
