Start with the dulce de leche. Melt the butter in a medium saucepan over medium heat. Add the golden monk fruit sweetener and stir continuously for 3 to 4 minutes until it dissolves and the mixture begins to darken and bubble.Carefully pour in the heavy whipping cream while stirring. Add the vanilla extract and salt. Continue cooking and stirring for another 4 to 5 minutes until the sauce thickens and coats the back of a spoon. Set aside to cool slightly.
Blend the eggs, softened cream cheese, almond flour, coconut flour, heavy whipping cream, melted butter, and vanilla extract in a blender until completely smooth. Let the batter rest for 5 minutes.
Heat a non-stick skillet over medium-low heat and add a small amount of butter. Pour about 3 tablespoons of batter into the pan and immediately tilt and swirl the pan to spread the batter into a thin circle.Cook for about 1 to 2 minutes until the edges lift and the bottom is lightly golden. Carefully flip and cook for another 30 seconds. Transfer to a plate and repeat with the remaining batter, making about 8 crepes.
Drizzle about 1 tablespoon of the warm dulce de leche sauce over each crepe, then fold them into quarters or roll them up.
Arrange the filled crepes on a serving plate, drizzle generously with more dulce de leche, top with whipped cream, and sprinkle with chopped pecans.
